Tonight I made chicken, baby potatoes and salad. I had fake chicken.
Daughter is avoiding gluten so I coated the chicken in spicy tortilla chips that I made into crumbs. Worked really well.
My son is also avoiding gluten. Thanks for the idea!

Made a fish pie, Jamie Oliver style.  Made mash a bit special by adding grated cheese. Very nice it was too

Went to the the fish guy (that's the name of the shop!) and got some tuna steaks and some trout filets.  The trout is for my breakfast on Friday I think.  The tuna is for tonight and I'm also going to try @JIL's ratatouille to go with it.  Assuming the veg that we've had for the last week or so is still useable.  If not I'll roast some peppers (maybe with added shallots?) that I bought and we'll have just those instead.

Funnily enough @Brie we are having roasted veg tonight, if theres any left over I will make it into Ratatouille and freeze it.

The roasted veg will be cooked with chicken thighs and chorizo, with some potatoes as well. Always a favourite and so easy.

I do end up with two roasting trays of it, one with meat and one without.  Probably because I do far too much 😀

OH has come into the kitchen and asked where the ratatouille is.  I said in the oven.  OH says "well that's not right according to Saint Elizabeth!!"  (aka Elizabeth David) Apparently every veg is supposed to be cooked separately in massive volumes of olive oil which no doubt she had to tell people in her books that they shouldn't be buying at the chemist.   I said something sacrilegious in response.  I know I should have said that Floyd used this method as that would have got a tut and a nod of approval.

I hope this will be like my homemade soup where the OH tuts and says how it's going to be dreadful and then asks for a second serving.

On the plus side he did say "oh! garlic!!!" in an approving fashion as having no garlic oil I had added 2 finely chopped very large cloves.  Nothing subdues an OH like excesses of garlic.

@ brie I use red onion,  white onion, peppers, aubergine, courgette and any tomatoes I want to get rid of.  I just chop them up, toss in garlic oil, add some balsamic vinegar, dried oregano and roast them in the oven.
Sometimes I add olives. Once roasted I add a tin of chopped tomatoes and let that heat. Simple, but that's how I cook.

from your previous @JIL......  I might think about adding the olives.  He likes olives.....
