Cooked a gammon joint that was in the fridge and husband is having that with egg, beans and chips (not all of it😀)
Daughter is having chicken fajitas and peppers and onions over chips.
I'm having a fish finger sandwich and chips.
Airfryer will be busy tonight.

When I was off visiting my mom the OH bought himself some nice dinners to have. He didn't look at the calendar and though I was away a week longer than I had scheduled. So there's some single dinners that need to be used up. One is a flammekuchen (which we both love) but I was really fancying having some pizza so I've bought a small one for my dinner. Thin crust with spinach and ricotta but I've got some polish meat to add to it as well as some mozzarella.
The mozz has been in the freezer as I'd bought some balls of it but didn't get round to using it so sliced it, put it on wax paper (should have used plastic wrap instead as the wax on the paper wasn't enough to keep the cheese sticking a bit) and laid it out flat in the freezer in a bag so I could peel off as many rounds as I need at a time. I don't know what I didn't think of this years back as I regularly have bought and tossed out mozz because of not using it by it's BBF date - and it's the sort of cheese that doesn't do well beyond that.I’m a Forum Ambassador and I support the Forum Team on Debt Free Wannabe, Old Style Money Saving and Pensions boards. OH tuts when I suggest things like this as he says I'm too much of a carnivore. I agree that I am and am trying to stay away from tooooo many carbs. I keep thinking of doing a variation of that.
I had a room mate decades back who would do something that was condensed cream of mushroom soup, tin again of white wine, heat it up and the put a few eggs in to poach in it and serve on toast. C_J how do you freeze your Mozarella please? Do you leave it's in salty water?I'm forever having half go off because I only do small pizzas for one and Tescos now do Buffalo Moz. Which is a much better cheese though a bit more costly. For me it's worth it.Going back to Marrow - I cook it (ready stuffed) in a little Oxo, Bay leaf and melted cheese on top. Serve with some passata or tomato.When working I would slice them into rounds, stuff, cheese and freeze these portions. If not used quickly the marrow went a little soft but it was a quick, refreshing, wholesome meal at the end of a long day.
I can rise and shine - just not at the same time!
