Yesterday I made a frittata, with a bit of chopped cooking bacon and some sliced courgette, fried, a small potato microwaved and sliced, some leftover cooked vegetables, and four lightly beaten, large eggs from our hens. A good frugal meal for two.
I made a lentil and vegetable soup, and DH made a loaf, so dinner tonight will be bacon, lettuce and tomato sandwiches and soup.2 -
We are going out for a meal this week, a very rare treat for a birthday or special anniversary. We have been to the college restaurant before, it staffed by the catering and hospitality students and the food and service are outstanding.

Gosh, I seem to have been missing from here for ages! Mister CJ’s cancer is getting quite a bit worse, and he’s been very fussy with food as everything tastes a bit weird for him so we’ve been living mostly on soups.Tonight however I have made some salmon fishcakes which we’ll have with some salad - drain and mash a tin of red salmon with some cold mashed potato, diced spring onion, a handful of cooked peas, some chopped flat leaf parsley, black pepper and a pinch of cayenne, bind with a beaten egg, form into patties and coat with panko breadcrumbs. Chill in the fridge for a while before pan frying.5

@C_J
Nothing the matter with a good soup!! As I learned when I needed to have my jaw broken for orthodontal work and had my mouth wired shut for 7 weeks. If it wasn't liquid it couldn't go in. And no, it didn't stop my talking.
But I'm glad he was able to enjoy something different. Big hugs to both of you.
Salmon does seem to be on the menu today - we're having one of the Lidl salmon wellingtons with a mixed leaf salad.I’m a Forum Ambassador and I support the Forum Team on Debt Free Wannabe, Old Style Money Saving and Pensions boards. We get marrows, sometimes of olympic proportions, at the food bank and the majority of people just look at them in horror. I don't know if it's because of something they were fed as a child or simply because they don't know what to do with them. I must admit it's something I have never had - as far as I'm aware. Not something mom would have served us for sure so only something I would have heard about in my mid 20s when I was first in the UK. I love courgettes but given that they are smaller generally I think they might have a bit more flavour.I’m a Forum Ambassador and I support the Forum Team on Debt Free Wannabe, Old Style Money Saving and Pensions boards. Haven't had a stuffed marrow for ages, never cooked it myself, it's just something that my mum would cook from time to time.
Dinner tonight is a classic cottage pie because its definitely Autumn here and I could do with some comfort food. Plus we have potatoes and carrots to use up.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20174
