Got a YS pork roast Sunday which we had last evening with new potatoes, yorkies and courgettes. All made much by adding a bit of med spice mix I'd forgotten was in the cupboard. (Zartar?)
Lots of pork left so I'm about to slice it and have it in the ciabatta rolls that were in excess at the foodbank today, saved me going for a shop and saved them having to chuck them out. I have watched videos on YouTube from assorted doctors and newish research says that if you cook potatoes then cool them, before cooking again , the starch in them is converted to Resistant Starch, which humans can't digest but it feeds the microbiome.
Supper tonight was an experiment. Bannisters Farm frozen jacket spuds, done in the oven plus Mediterranean style vegetables. Freshly microplaned Parmigiano Reggiano on the veg, plus ready grated Mozzarella and Netherend Farm organic unsalted butter on the spuds.
I figured that they must be cooked or part-cooked, not just frozen raw spuds ?
This is not health advice, just an experiment to see if the research works in real life.2 -

but seriously it’s amazing how the body metabolises food, I was Keto/carni for years, I’ve really noticed the difference with the carb creep after dealing with death of dad, new job etc, not just weight gain, but arthritis/skin/sleep etc is worse. Will get back on the Keto bus now that I’m in more of a routine.Note to self - STOP SPENDING MONEY !!

I made some hummus with a can of chickpeas from the back of the larder and ate it with a pitta bread and a huge salad.

After all that about Keto, we’re having Swedish meatballs and sweet potato fries with Ikea style gravy.I’m craving steak and mushrooms, that will be my weekend treat for surviving the work weekI love my new job, but the first week of the month is non stop data and i haven’t got time for fancy meals, just hope the meatballs are okay, they’ve been in the freezer for months, they may have fossilised 🫣Note to self - STOP SPENDING MONEY !!

I’ve got two enormous portobello mushrooms which I will stuff with a minced beef, rice, diced onion, garlic, pepper, spinach and cheese mixture to use up lots of odds’n’ends. There’s a humongous amount of filling so I’ll be stuffing a couple of red peppers with it too and roasting them alongside the mushrooms - and that’s tomorrow’s dinner sorted as well.2
