Making summer rolls and satay dipping sauce, using bean sprouts rather than rice noodles as they are wrapped in rice paper and I’m not double carbing. I would normally have lettuce wraps but got shredded lettuce substituted in shopping this week 🤷‍♀️

fish and chips tonight.  OH will be adding a very healthy well buttered slice of white bread to his meal.  And I'll be adding a bit of salad.  We have a nice selection of yoghurt pots in the fridge for afters and I've also got some lemon cheesecake pots as well.

I have made fish pie, for two. Easy peasy. I just used a fish pie mix, 50% off at m and s. A sachet of Schwartz fish sauce with white wine mix and topped with a couple of jacket potatoes half cooked in microwave and sliced. Baked for 45 mins.
Served with samphire and mixed greens also reduced.

I was going to do chicken breasts with mushrooms and cream and rice but OH declared that was too much rice for 1 week (we had curry on Tuesday...) so has "demanded" pasta instead.

Hubby said surprise supper tonight - bet it’s fish and chips, he’s mentioned them about 3 times this week 🤣 I’ll de batter my fish and have with salad

BTW for those that didn’t know, chip shop chips can be frozen and air fryed back to life, our chippy does huge portions and only he eats them so makes a couple of quick extra meals for the freezer very @MSE

My brother actually buys chips from our local chip shop, when he visits and takes them home 120 miles away and freezes them.  A nostalgic taste of home? He portions them up and airfrys them.

Last night I just stirfry a few peppers, courgette, red onion, added a pack of flavoured couscous and a small tin of chickpeas. Served with chimichurri lamb steaks and big mushrooms and halloumi.

Tonight its fish finger sandwiches in ciabatta with tartar sauce and skinny fries.
