I did an oven baked mushroom risotto, salmon, also oven baked with spinach and  tender stem broccoli.

In true mse style, whilst the oven was on I made banana muffins.

I made some bolognese sauce which we had as spag bol yesterday, and there was (surprisingly, as I only used about 200g mince) stacks left over so I've just turned that into a bolognese + extra veg + cheesy pasta bake for tonight.  And probably tomorrow too, it seems to have stretched very well!

I think it's supposed to be kfc style chicken tonight.

I might offer to make pasta sauce instead as we've been eating a lot of meat over the last few days.  I've got courgette, red onions, mushrooms and tinned tomatoes so that would be nice.

I'm just making a roasted vegetable tray bake. I do two trays, husband and daughter have potatoes and chicken and chorizo in theirs.
    Mine is just veg.
I will have mine mixed with pasta and feta today.
