We’re away for a few days from tomorrow, so will use whatever’s in the fridge, and DD will take anything that’s not going to last till we get back, tomatoes and some salad bitsNote to self - STOP SPENDING MONEY !!

We're having roasted red peppers tonight, which I have stuffed with minced beef plus chopped garlic, shallot and a few wrinkly mushrooms which need using up. I've made an apple and blackberry crumble for the next few nights' puds.3

It’s Mr CJ’s day for more chemo, and this often leaves him tired and washed out so I’m not sure what to do for dinner. I’ll make a pan of soup before we leave for hospital (that might be all he fancies) but if he’s hungry I’ve got some of those Jamie Oliver curried meatballs in the freezer which can be swiftly reheated.2

I picked up some bargain prawns with sundried tomato x 2 yesterday and since I read about @Brie s cruise and simple spaghetti, that's my plan, the tubs of prawns with spaghetti and rocket leaves on top. Dont know how that will go down with others but I'm tired and want to do simple.

Meanwhile I'll be cooking for the first time since getting home. I realised that we hadn't had chicken at all during our cruise (everything else but!) so wanted to get some chicken thighs to chuck on the bbq to have with salad. The simple spaghetti and prawns which took 10 minutes to make was really nice.
I used up some baby plum tomatoes and sauted them in basil and garlic oil, added the prawns and sundried tomatoes and added the cooked spaghetti. Simple.5 -
Tonights meal is chicken provencal from the freezer plus veg and some rice pudding afterwards Beans on toast for lunch with some grated cheese on top
