Freezer dive this morning and found two of my favourite Gloucester Old Spot sausages also dug out some mash and peas and carrots so that's dinner sorted.
I've moved dinnertime to lunchtime as I find it easier to eat my main meal at lunchtime now, so at teatime now I shall have a couple of poached eggs on toast, uses up two of my three left eggs.
I'm away on holiday shortly so juggling the fresh food around to use it up. I still have some tomatoes ,lettuce and cheese in the fridge so I may use them up tomorrow with the last egg hard boiled with some of my bottled beetroot my neighbours gave me to make a small salad. I also have a tin of new potatoes that I will use in the salad as well. I have a jar of peppers in the cupboard so I will open them which will bulk out the salad a bit
Today I am rearranging my freezer now I am getting a bit more wriggle room in it and will re-list stuff that's in there.
I know I have around at least two 500 gm packs of mince in there so I may dig them out to make some of my DGDs husband Tommy's pasta sauce. Its really the best I have ever had.
I was at her house a couple of weeks ago and he had made a huge pot of it ,and DGD Katie said 'I've done you a pot up Nanny to take home '.
Gosh is was so nice I got her to send me the recipe. Extremely yummy and well worth the effort, so Tommy's pasta sauce will be made and portioned up for the freezer.
No shopping to buy at the moment and using the stuff up in my stocks is making for some inventive meals.

I too have unearthed sausages from the freezer - four of them which need using up, along with quite a few bits from the fridge so tonight I'll turn that into a creamy sausage and pasta bake. That will use up half a red pepper, some red onion and garlic, a few sad looking mushrooms, half a small fennel bulb, a small courgette and a pot of cream which goes out of date tomorrow. It might even make four portions, so will feed us both tomorrow night as well

Lots of lettuce to eaten here, both homegrown and from the supermarket, so halloumi salad for lunch and then fully loaded burgers (2 beef, 1 fish and 1 Linda McCartney 😆) with a big green salad for dinner.Books read 2023 - 49/754

Sausage and mash were delicious, I forgot the mash I had made I had grated some of the last of the strong cheddar into it so it was really tasty, I found some pickle in the cupboard as well so added more flavour I'm not made keen on gravy with bangers and mash but the sweet pickle gave it a biota a zing instead.
Rearranged the freezer a bit now, all bread, rolls, wraps and bread type products ( found some slices of individual ginger cake I had forgotten about) so a slice later on after tea with some butter will make a nice 'fill-up' Everything sorted to the bottom drawer of the freezer so I now have a bit more room in the other two drawers
As its become extremely warm this afternoon I decided 'Tommys pasta sauce 'can wait until its a bit cooler to make up.
But have sorted out some meals for the rest of the week to use up stuff and make some more room

I had purchased a pile of asparagus which we will have tonight with a couple of portions of the side of trout that the OH got this morning when at the market. Using up all the salad bits today, a couple of tomatoes, some lettuce ,grated cheese, beetroot, some sliced jarred peppers the last egg hard boiled, and I dug a chicken quarter out of the freezer.
My fridge will almost be empty of fresh food.
I am out to dinner tomorrow and Sunday, so only really have four main meals to dig out from the freezer next week then I'm away for two weeks to the IoW. Plenty in the freezer to cover them, so virtually no food shopping to buy at all.
I have some left over potatoes in my veg bag to peel boil, mash, cool, and freeze today rather than waste them, that's my first job after my morning cuppa. Not a scrap of food will go to waste at all in my kitchenThis afternoon I will get my two luggage grips down and start to organise the packing for next week. jam really looking forward to a holiday and as I have my pre-op check two days before I go, I'm hoping I will have a letter with a date on for my operation when I come home
Weather is very humid at the moment, but there was a quick heavy shower late last night which has saved e having to water the potatoes this morning
