    Last night we had chickpea and spinach curry, popped into M&S on the way home for some naan bread (smallest won’t eat rice 🙄) and managed to get three packs YS for £1 each. Each pack has two naans and we tend to only have one between 4 so v pleased to have another 5 meals worth in the freezer! 

    Tonight we’re going to tackle the lettuce mountain and have a big salad, with falafel/halloumi/breaded chicken, asparagus, a few leftover jersey royals and sourdough.

    I’m making a curry thing tonight - curried cauliflower purée topped with small chunks of chicken and potato which will have been gently fried in curry oil until golden, then finished with a handful of spinach. I’m not sure this dish has a name, but it’s very tasty 😀

    Hoisin and miso chicken stir fry possibly? I have a lot of veg to use up so I may also make something else for tomorrow.

    Maybe an aubergine lasagna too.

    Tested positive for Covid yesterday - Had no dinner - bed at 6.30 as felt so poorly. Not sure whether I will have any dinner tonight yet.

    This weekend the stars have aligned and DH and the kids are all away! Without me! I’m on my own! I won’t know what to do with myself (I will 😆). So I’m going out for dinner with the girls to the local Greek restaurant, no cooking for me until tomorrow evening - there’s leftovers to nuke for lunch 😉

    Nice weather here today so we are gonna get the BBQ going. I’ve got sausages and chilli chicken pieces defrosted then I had some BBQ pork skewers so that’s the meat sorted then will do some spuds and salad
