  • Chicken balti pies for us tonight.  Recipe is from Mr Paul's pantry on YT and they are delicious.
  • DH is away so making the most of us all being able to have salmon for tea (he will only eat breaded fish 🙄). Eldest is going to make teriyaki salmon with veg noodles and spring rolls.

    I am not working today (work isn't open) so of course I went to the office to scan a big bag of documents while the OH drove about going to the post office and then to Waitrose where he got us pizza for tonight.  He's got a margherita to which he'll add anchovies and I've got roasted veg which has artichokes on it - I might add some more from the jar lurking in the cupboard.  And some mozzarella.   I noticed that us both being on a diet was forgotten when he picked up some tiramisu.

    No cooking for me as we ate at SA - chicken followed by crumble and custard.
    Last night's dinner was yummy. 
    I tossed the cooked cabbage in sea salt/black pepper/garlic powder & Carribean seasoning.

    Roasted veg, roasted mushrooms, roasted sweet potatoes, roasted salmon. All done in the oven, whilst I popped to visit my parents. My mum insisting I still live at home. My dad not really understanding what effect dementia has. 😪

    Dementia can be a cruel and nasty thing.  Not bad if people are happy in themselves - like my MiL.  My own mother is not quite so easy to deal with.  

    I like the idea of all the roasting things!

    @JIL you have my sympathy too, MiL is suffering terribly, her lastest concern is that there is a man living upstairs, she lives in a bungalow. A few weeks ago it was her cat, who died at least 20 years ago was annoying her.  We’re in the process of getting her reassessed with the view to a care home, so sad as she is such a strong, independent woman 😔

    It’s our GS’s 4th birthday today, so we were all up at 6 am 🫣 to see him open his presents, unfortunately dad had to work today, so they will go to Pizza Hut for tea, before mum starts her night shift.  Grandpa and I will have leftovers at home, enjoying a few minutes peace 🤣

    Frank gets his second inoculations today, so not long before we can start taking him out and about 🙌

    @JIL dementia is so cruel both on the person suffering from it, and those around. 

    Last night I cooked up some pasta with the last of a jar of stir through sauce, added some single cream and chopped smoked ham. Also some grated mozarella. Drizzled with balsamic vinegar and olive oil. Very nice it was too. 

    Portion LO without the ham so either myself or OH can have that at some point.
