    Sorting out some fridge veg today - mushroom soup, caramelised onions and babaganoush 

    meal plan written using stores as much as possible, small shopping list for my new year foray to Aldi tomorrow 

    we have about a million jars of olives and pickles, which luckily have long dates, so they’ll get used as and when.  Loads of charcuterie and cheeses too, but that’ll disappear with no problems, easy lunches 😋

    Shepards pie tonight, with small one extra for MIL and a portion for GS’s Nursery dinner on Friday, I’ll have the mince with the LO celeriac dauphinois from yesterday.
    Note to self - STOP SPENDING MONEY !!

    Re chicken livers, I saw kilo packs for £1 in a discount shop near me. I thought how rarely they are seen. They weren't selling well even at such a low price.
    I think chicken livers have been £1 a kilo for the last 15 years.  Usually frozen but that's fine.  I think that Waitrose may be one of the few places that sales them fresh regularly - usually slightly move expensive but then often discounted so people can take them home and freeze them.

    I doubt we will see vegan chicken liver anytime soon 😅

    Tonight its definitely pasta, daughter will have hers with vegan meatballs.
    Husband and I will have salmon and courgette with ours. This is one of daughters favourites, let's see how long veganuary lasts!!

    Last night was meatball pasta bake with loads of veg blended into the sauce. The meatballs I got reduced for 75p so very happy with that 

    tonight is Spanish omelette my husband made. We actually had a cheeky Wetherspoons lunch so we aren’t massively hungry and that will do us.

    Back to normal vegan meals for us two. Last night I made a red lentil, buckwheat and veg stew with sausages all cooked in one pan using the lowest setting of the smallest ring on the hob. Tonight I did a spag bol with courgettes, tomatoes, kidney beans and vegan mince, loads of black pepper and nooch on top.
    Home-made spicy sultana cake after.

    Pasta again tonight. OH had some jalapeños in his with pasta sauce and I used the bolognaise left over from the other night. 

    Oxtail and stock out of the freezer defrosting to make a bulk cooked stew hopefully tomorrow using lots of 19p xmas veg too.

    Defrosting some sausages for tonight. I got them for Christmas expecting everyone to want a full English on Christmas Day or Boxing Day and only 3 got eaten in a sandwich. 

    I’ve still got a few potatoes and carrots left from my 19p bag but that will get used up tonight. Plus I’ll make my own onion gravy as we seem to have loads of onions. Peas as my daughter loves them and I think I’ve still got a few yorkies leftover. The freezer is still quite full so working through it
