    When I was in tenerife I had a tuna casserole with mojo sauce. I absolutely loved it, so the iceland fish deal 3 for £9 (because I took husband with me on a Tuesday) got me a bag of frozen tuna steaks.
    Tonight, I mixed red onion, courgette a load of tomatoes and some baby potatoes in some mojo sauce, poured it over the tuna steaks and baked for 40 mins. It was lovely and bread was needed to mop up the juices. Will make that again.

    @JIL that sounds lush 😋

    OH is taking me for a long lunch today.  My birthday is on 22nd December and going out to eat before Christmas is a nightmare (first world problems, I know) so we tend to go out in that dead bit between Christmas and new year after the office parties have subsided.

  • We had cauliflower and stilton soup and it was possibly the worst thing I've ever cooked. And there's another portion to be eaten for leftovers  :'(

    @dangerbadger could you turn the soup into some kind of sauce maybe?

    OH had beans on toast as I couldn't find any pizza dough in the freezer.

    I had some sliced ham (liberated from the depths of said absent pizza dough freezer, i swear one say I'll find Narnia in it), with some LO tinned potatoes which I roasted in the air fryer, along with a reheated stray parsnip from xmas, and a fried egg.

    I can actually see some shelf space in the fridge now, though still have lots of 19p veg to use / process into something. I feel an oxtail stew coming on next week.

    Oh and there's a frozen half leg of lamb in the freezer that would break a toe if it falls out (very Tales of the Unexpected)

    Honestly, I wouldn't risk turning into a sauce and it ruining another dish! I think there was something wrong with the turkey stock I used, and I suspect I overcooked it hence it being quite bitter. I've decided to leave the leftover portion for now and just eat tasty things today instead. So tonight will be cottage pie and veg, maybe a cheese board for afters.
