    Poached Skate tonight with Crinkle cut chips again tonight, the Pineapple Flan with Greens Gel and Evaporated Milk, dreams of Christmas past, this will last until tomorrow.

    Some people may ask why the same as yesterday, well the skate comes packaged as two and the pineapple flan is to big to eat in less than four days.

    I used up 2/3 bag of tired carrots, 2 small onions, a smidge of old celery, some fresh ginger, bit of orange zest, a shake of chilli flakes and cumin, homemade stock, and 1/3 can of coconut milk to make carrot and ginger soup. Almost everything was stuff that 6 months ago I would not have got round to using and would have ended up throwing out. It’s totally delicious and will make a lovely dinner tonight and tomorrow with 1/2 bag of slightly out-of-date croutons.

    Husband had a chicken curry, dahl and rice from freezer. I had some baby potatoes, quiche and waldorf salad.

    Was going to be pot roast brisket with all the roast sides, but I’m feeling lazy, so will cut up the meat and stew it in the slow cooker make some dumplings for them - much easier 😆

    Back and forth day yesterday and dinner ended up being french stick witj pate, and a pot noodle later on.

    Not sure about today - oh actually i did promise OH stir fry but he's currently munching xmas nibbles before the football so may not be hungry by dinnertime.

    easy supper tonight - we'd bought some smoked salmon directly from the smokery in Dublin so we're having that with some crusty bread.  I've also bought some of those little salmon mousse wrapped in smoked salmon as a little extra.  There's also some cream cheese as well as some pickled herring and creme fraiche if we fancy it.  W's had some Bonne Maman salted caramel puddings reduced so we've got those for afters.  Unless we decide to be healthy (ha!) and have satsumas instead.
