I have some diced pork, onions and mushrooms simmering in the slow cooker in chicken stock and cider. Will thicken the sauce and add a splash of cream then serve with peas, carrots and green beans. There’ll be enough for four portions, so we’ll be finishing it up tomorrow night.
My menu planning is so out of kilter with the weather!!!3 -
Brisket, done in the slow cooker, roast potatoes done in the actifry (with a quorn sausage for me) with a load of steamed veg.
Cheesecake and icecream.

hovis loaf buttered and lots of smoked salmon. there's lemon juice and capers. I'm going to make a bit of salad too for myself.

Sausage and spring mash pie. Loosely following this recipe: https://www.bbcgoodfood.com/recipes/sausage-spring-mash-pie
We used veggie sausages and veg stock, ready made mash (YS), a cabbage and leek mix (olio freebie), onions instead of shallots and omitted the mushrooms and caramelised onion. Served with broccoli and green beans (YS).
Afterwards will be strawberries and cream.2 -
Had the rest of yesterdays tofu and red pepper with YS new potatoes and an enormous salad followed by coffee.4

Was too hot to cook tonight, family had leftover lamb, salads etc made into wraps. I have a bowl of Greek yogurt - deliciously cooling 👍Note to self - STOP SPENDING MONEY !!

Chicken breasts are on the meal plan for tonight. I had intended to split them, fill with cream cheese, wrap them in streaky bacon then roast them ….. but instead I will pan fry them and slice them into a nice cool crispy salad.3

We've have a relative visiting for a few days, it's been lovely (if very hot for them).
Sunday we went to a local(ish) pub well known for its sandwiches so had those and chips for dinner.
Yesterday we went to one of our favourite restaurants. I had halloumi fries to start, a shrimp burger for main and shared a pavlova for pud. Was all very very nice.
