Sandwiches planned for this evening. There's some chicken thighs left over from the other day and the OH has suggested salmon or tuna mayo. I'm thinking I'll have the chicken with avocado that should be nicely ripe. Tonight needs to be something very quick and easy, for a number of reasons. So I am making refried bean, cheese and chilli quesadillas. I normally pan fry these, but I might try cooking them in the panini press instead.2 -
I'm grateful that my mother made spaghetti so very rarely. Because she hadn't a clue. Over boiled pasta reheated with condensed tomato soup. No wonder I didn't know how to twirl the stuff on my fork until I found out what real Italian cooking was when I was in my 20s!
On the other hand I still dream about her wonderful pies - endless apple ones, wonderful strawberry ones and a rare but divine raspberry......nommmmmmmmmmm!!!!!!!
