Sandwiches planned for this evening.  There's some chicken thighs left over from the other day and the OH has suggested salmon or tuna mayo.  I'm thinking I'll have the chicken with avocado that should be nicely ripe.  Or I might have that separately with tomatoes and mozzarella.

Spag Bol tonight as requested by 3 yo GS - sketty as he calls it, how could I say no 🤷‍♀️

    I’m fasting
When my daughters were tiny, they used to call it "pazgetty". Actually, they still do

Tonight needs to be something very quick and easy, for a number of reasons. So I am making refried bean, cheese and chilli quesadillas. I normally pan fry these, but I might try cooking them in the panini press instead.

I'm grateful that my mother made spaghetti so very rarely.  Because she hadn't a clue.  Over boiled pasta reheated with condensed tomato soup.  No wonder I didn't know how to twirl the stuff on my fork until I found out what real Italian cooking was when I was in my 20s!

On the other hand I still dream about her wonderful pies - endless apple ones, wonderful strawberry ones and a rare but divine raspberry......nommmmmmmmmmm!!!!!!!

I did an easy meal last night - Frikadellen burgers in a roll.
Need to use potatoes and eggs/tomatoes for tonight's meal.

we have fresh mackerel from the fish monger to go with new potatoes.  I might do a small tomato salad as well.  Not sure if the chef is doing the fish on the bbq or not.  Honking huge strawberries for afters.  I mean HONKING HUGE - the duck eggs we get from the market are smaller.  Courtesy of Aldi!

I made Delia's cake of the week Chocolate Soured Cream Cake | Recipes | Delia Online for a treat this evening as I had all the ingredients already and needed to use up the sour cream which had been hanging about in the fridge for ages.
