    @Florenceem I hope Mr F is feeling better today.

    I have some oddments to use up today and have made a cauliflower and pasta cheese bake for tonight, with a Key Lime pie for pud.

    Oven baked risotto, oven baked salmon and some roasted vegetables. 

    Just did a fridge sort out, so a few odds and ends needed using up.

    It's the chef's night off so I said "I'll get some fish!"  Then I realised I wasn't going to be anywhere near a fish shop of any real quality - even the Tescos and Sainburys have closed their fish counters in our areas so everything is pre packaged no different to Lidl or Aldi. 

    Then as luck would have it I was sitting waiting to get my eyes checked and they had a National Geograhic Food magazine (currently selling on ebay for £9!) and there was an article about making shrimp gumbo.  So inspired I've decided that tonight we'll be mostly having prawns cooked with courgette, peppers and shallots in tomatoes served over fusilli.  Ok - not gumbo but that recipe looked lush and I might try it when I can get some okra.  (I took a photo of the recipe cuz I won't be buying the mag!)

    @Brie thank you, you've totally just reminded me I used to make this 'gumbo' recipe and haven't made it for ages.

    I often would leave out the chicken or ham if i didn't have both in, and I'm not a massive prawn fan but Lidl did a nice pack of crayfish which I'd use.

    Basically, I'm not very good at sticking to recipes, but the sauce base is fab, and quick...and I was looking for something other than risotto to use stock with.

    Tonight was katsu stir fry, bought a bag of frozen Asian style veg from Lidl today, defrosted some noodles and added in some spring onions I'd chopped and frozen, plus some sugar snap peas from Olio the other day.

    Off to check the gumbo recipe in more detail now....

    My partner made a rather delish korma curry tonight. Nothing too spicy, but certainly very very tasty, especially with a naan and basmati rice.

    Wish I had some ice cream to finish off a splendid evening.

    Evening all

    sorry it’s late! 

    I was at work this morning, then home to make dinner and have my lunch before rushing out to work again. Dress rehearsal and staff meeting so busy day today 

    I made creamy tuna pasta bake. I cooked it all then all my husband needed to do was reheat it. I had some veg I needed to use up in it. Considering I made it up as I went along it was very similar to the popular tuna pasta bake jars you can buy

    OH had beef burgers (YS) and I had Quorn nuggets, both in buns (YS) with corn on the cob (YS). We were supposed to be having curly fries, but there was only a tiny handful left so we had those and added a tin of spaghetti hoops to the meal.

    Breakfast was raspberry croissants (YS). For lunch I had a bagel (YS) topped with olives and feta that needed using and some cashews and OH had chicken fettuccine alfredo (YS) with some olives and crisps.

    I made these Nigella's soda buns yesterday and they were very easy and quick with impressive results. Definitely worth a try if you're out of bread because they probably took me about the same amount of time as walking to the shops and back to do.



    They only needed 15 mins in the oven so they're quite economical too. I used Mr T's fat free greek style yoghurt which made a lovely soft crumb.
