    @C_J Key lime pie?? I do always love a margarita tho 😋

    Managed to declutter the kids to my parents for a few days, so DH and I went out for dinner. By ourselves! 🙌 We went to a local Italian, DH had large pasta shells filled with chicken, pesto and cream, I had mussels, it was delicious and a lovely treat.

  • We had lots of leftovers from the chicken I roasted in the Remoska on Sunday, so tonight we have Chicken Enchiladas. We had the chicken legs cold with salad for lunch yesterday, so last night's dinner was more of a pick-up supper (soup & sandwich) while tidying up.

    Today I defrosted some pork mince. I fried that up, added onions and mixed peppers. Then rice, stock, tomato purée and taco seasoning. Let the rice cook and absorb the liquid. Then added white beans and sweet corn a few minutes before the end. I enjoyed it, my daughter had a few spoonfuls of it. Hubby will eat his later. There should be enough left for a lunch one day.

    More laziness around these parts as the kids are still away - £10 Thai meal bag from Waitrose, enough left over for DH to have for lunch tomorrow.
