Managed to declutter the kids to my parents for a few days, so DH and I went out for dinner. By ourselves! 🙌 We went to a local Italian, DH had large pasta shells filled with chicken, pesto and cream, I had mussels, it was delicious and a lovely treat.

Dinner tonight was a portion of the risotto i made the other night with some french beans from Olio

The last of a pineapple to use  up so tonight will be bacon (haven't any gammon) pineapple, chips, egg, grilled tomato.

We had lots of leftovers from the chicken I roasted in the Remoska on Sunday, so tonight we have Chicken Enchiladas. We had the chicken legs cold with salad for lunch yesterday, so last night's dinner was more of a pick-up supper (soup & sandwich) while tidying up.

Today I defrosted some pork mince. I fried that up, added onions and mixed peppers. Then rice, stock, tomato purée and taco seasoning. Let the rice cook and absorb the liquid. Then added white beans and sweet corn a few minutes before the end. I enjoyed it, my daughter had a few spoonfuls of it. Hubby will eat his later. There should be enough left for a lunch one day.

A few days ago I made a large pot of spag bol in my slow cooker, and poured 7 smaller portions into Tupperware tubs and froze them apart from one, which I had today. And it was bloody gorgeous!

More laziness around these parts as the kids are still away - £10 Thai meal bag from Waitrose, enough left over for DH to have for lunch tomorrow.
