  • I've made a big pot of beef bolognese with a few left over mushrooms and some grated carrot from veg patch added for good measure. It's simmering on the hob for OH/DD to have in a bit with some pasta and garlic bread. I'll have mine later as I have to work this evening for a couple of hours .

  • Everyone busy tonight (except me, I am lying on the the sofa with the remote to myself 😉), so we had early dinner of Costco meatballs with HM tomato sauce, spaghetti and broccoli. Eldest had leftover wedges instead of spaghetti as he’d had pasta for lunch.

Jack Monroe's vegan lasagne. Though only the base was from the recipe - the cheese sauce was out of a jar today!

I think I may regret this tomorrow, but using up a large bag of scampi I bought as a quick meal for Christmas when the family were over, but not used and taking up valuable freezer space. Will be the most carbs I’ve had in months 🥴 I’ll add a few peas and chips to DH’s plate, and I’ll make some tartare sauce 😋

There will be meatballs and spaghetti for tea tonight. I made the sauce earlier from tomatoes and bits from the fridge.

    Made a trifle for pudding!
  • I've put some potatoes in oven for easy tea of jacket spuds. Fillings any combination of grated cheese, tuna, baked beans, left over beef bolognese. That'll do.
