  • First time poster, long time lurker and even longer time (lifetime) old style money saver.

    Sammy, Sorry you are under the weather today, hope you get all your jobs done, it sounds quite a long list when you're not feeling good.

    Some little while ago you were saying you would like to make jam but have no fruit until next summer.

    Here are one or two ideas that I have used in the past when I have run out of homemade jam in the winter as I wouldn't dream of buying jam.

    A bag of frozen raspberries to equal quantity of sugar, done in the microwave, not cheap but very special.:rolleyes:

    Dried apricots make a lovely jam.

    Apple and ginger is also lovely but stem ginger is not cheap.:mad:

    If all else fails have you tried homemade lemoncurd (something to die for) not going to be cheap these days with the price of butter but I suppose you could just about get away with using margarine. It is super for lemon tarts or as a filling for sponge cakes and also I find eats quite well straight off the spoon! Shhh I haven't said that.

    i've got a bag of frozen summer fruits. i picked up in iceland reduced to 50p or 25p little while ago. was thinking of doing a summer fruit braid with it. but i may make some jam now.

    fab idea.

    i recently bought a jar of value lemon curd ,to put in jam tarts instead of jam. i bought value as i didn't know u could make it.

    Mollymop 5 Here is the Lemon Curd recipe.

    1 1/2 breakfast cups of sugar (I use a mug for this)
    4 oz butter or marg
    2 Lemons juice and rind finely grated
    2 eggs.

    Put in stone (old recipe this, pyrex will do) basin
    Stand it in boiling water until contents are dissolved. Add well beaten eggs and stir until thick. Cook for about 15mins. Do not boil.

    Pour into sterilised jars. It makes about 1 1/2 lbs.

    D&DD This is a fantastic thread and I've been inspired by all you bake for your children. Well done, these things are not done without effort.

    Your donuts sound lovely and I'm sure would please the grandchildren. Do they freeze? This is probably a daft thing to ask you as I don't suppose they ever get as far as the freezer in your house.

    i think im getting addicted to cooking! Made more donuts this morning, this time with pink icing and sprinkles:D

    have made 2 lasagnes, i used the greens from the veg box in it....cant wait to try it (too hot atm lol)

    hmmmm.....what else can i make?????

    i'm in a baking mood. but then i'm also in a snuggle mood. both kids snuggled on sofa after therei bath watch toy story. it is soooooo cold.

    the lemon curd recipe sound so easy. ( i don't know if i even like the stuff tbh , lol ) if it like the stuff u get in lemon meraginue then yes i do
  • {hugs} Sammy... I and the littlies have been ill this week and last... not nice :( Hope you feel better soon. Get those snug pj's on in bed and a nice thick blanket - it's so nice to be cozy in bed!!!

    I have dough in the BM for iced buns... but am going to put HM choc spread in the middle!!!!! YUM! Have pizza in the oven... and need to do more baking...... complaints have been coming as I haven't been baking recently...(as I am trying to loose weight and therefore not baking in order to help myself)... so am trying to do loads to get in the good books :lol:
