This is my mums recipe copied out from the original recipe she used when she was a dinnerlady at my school :D

    Pastry
    12 oz plain flour
    2 oz icing sugar
    1 tsp salt
    3 oz lard
    3 oz butter
6 tablespoons of really cold water
*NB don't forget theres a GF version here somewhere..*;) Will add a link in a mo..http://forums.moneysavingexpert.com/showpost.html?p=6877222&postcount=420

    Filling
4 oz marg (pure marg for GF/CF)
    4 oz c sugar
    1 egg
4 oz plain flour (doves farm flour)
2 tsp baking powder (gf baking powder)
    2 oz ground rice
3 fl oz cold milk (soya milk)

    Jam to spread on base..

Make pastry.Roll out and line a large flan tin (mine is about 9 inches)..Chill for 30 mins.Spread jam thickly over pastry base.(I used HM strawberry last time and it was goorgeous!)
Sponge mix..Cream marg, sugar together add egg.Add flour,b.powder and ground rice to the mix.Slowly stir in the milk.*should feel like a slightly softer than usual cake mix*
Spread filling on top of the jam and pastry.
Bake for 30 mins approx *watch the top you may have to pop a bit of foil on* 190c,gm5,375f.
Sponge usually starts to 'crack' slightly when cooked ;)

When cool make up a thick icing and drizzle over, leave to set.

haven't checked to see if anyone has already posted this so if you have... apologies!!

JCR16 - I used thriftlady's recipe which was published by D&DD on this thread:

    Thriftladys choccie spread recipe
    1 oz cocoa
1 1/2 tbspns sugar(she said she used granulated)
    1 des spoon flour
    4 fl oz milk

Bring to boil slowly, stirring and cook til thickened.

    GF/CF version :D

1 oz df cocoa powder or carob powder
    1 1/2 tblspns caster sugar
    1 tbspn gf flour
    4 fl oz soy milk

    method as above..

the only downside was ds1 found it slightly bitter but ds2 loved it! I am going to try drinking chocolate instead of cocoa powder next time :)

Someone has more sultanas than me :rotfl: I think I only have 3 bags left now after the baking mission.

Yes it's stir up Sunday tomorrow, was a thing about it in one of the papers trying to get people to make them.

Admittedly I have never made Xmas pud or a traybake, DP is out all day tomorrow so might try. Ah problem, we have no alcohol and I think I need to add it when making Xmas pud, I think I have Kethry's recipe for Xmas pud still, will have a look in a mo. Oh might be short of eggs too, darn it. Means I'll have to get off my bum and go hunting. Might try the recipe that Jamie posted for tray bake, I could just add sultanas to that couldn't I?
One day I might be more organised...........

  • Thanks Dee, perhaps you'll let us know if your donut freezing experiment is successful, if it is, perhaps I'll invest in a donut maker. They look fun.
