  • homealone - no banana bread can be made by hand (i dont have a bread maker either) adn ill gladly give you my recipe too if you'd like it.

D&DD - hi hun, glad to see your still goign with this thread. Im tryign my hardest to shop form home at the minute, BF has decided that after christmas next year will be the year of making a major dent in his debts. Im hoping ill be able to get mine paid off next year too but mine are considerably lower than his. (mine are abotu £270 and his is more like £11,000!) so we will be paying them off and making a big dent in them thankfully.

So i need to get a stock cupboard set up, and im hoping to join in doing a monthly shop rather than a fortnightly one at some point and am going to start crafting, and money making more next year through various things and then that way fingers crossed we will be better off as these debts are going to be crippling us before long i think and id lvoe to save up to buy a house at soem point

    From his Family Cookbook..
To make 1 loaf (I normally double this & do a batch as it freezes beautifully)
    75g dried apricots
    75g sultanas
1 lemon (I don't bother unless I have one in)
100g unsalted butter (I use Stork lol)
    125g caster sugar
2 large free range eggs (tesco's value are fine  )
    3 large ripe bananas
200g self raising flour (or plain with baking powder..)
    2 lb loaf tin

Preheat oven to 160c/gasmark3.Line loaf tin or use a liner.
Chop apricots to same size as sultanas grate zest of lemon.
Cream butter and sugsr add eggs slowly add dried fruit and zest.
Mash bananas well with fork and add them to bowl.
    Sift in flour.
Scrape into tin and bake check after 50 mins.Done when a knife inserted comes out clean.
*I find this catches in my fan oven so put a bit of foil on top after about 30 mins or if you have a slow oven too bake it in there for about 1hr*;)

Morning jcr :D It was a bargain buy £3 odd on amazon it looks really weird but its probably one of the best 'gadgets' I've bought :T Its non stick and it makes the loaves to a perfect shape just like shop bought (I found mine spread out too much too on a tray as well ..) http://www.amazon.co.uk/s/ref=nb_ss_w_h_?url=search-alias%3Daps&field-keywords=french+bread+tin&Go.x=7&Go.y=15
I used the basic white dough mix for the panasonic I can post the recipe later if you don't have it,worked beautifully I plan to dabble with a tesco's bread mix today, also need to try a gluten free one for DS3.The panny has a french dough mix but it takes hours so might stick on the morphy richards one and see if it makes any difference with the 'proper' dough.
I also need to make a batch of gf brownies for his nibs and your iced fingers..a soon as I mentioned to OH you made those I knew he'd want some..might try sticking some jam inside them like you get in the shops ones sometimes,I've got a gadget for filling doughnuts somewhere which should do the job :D
  • JCR - we had the same idea as you for using the dough from the apple braid to make iced fingers buns. It's exactly the same texture as the ones from DS2's favourite bakers round the corner and he won't eat the apple one because he won't touch the filling. He loves apples, too.

The braid was lovely, tho, D&DD and was absolutely huge! I couldn't resist it this morning and had another slice for my breakfast. DH enjoyed it with CSI last night and a cup of coffee. :D

Well, DS2 has just looked over my shoulder and spotted the chocolate doughnuts, so guess what we'll be making for tomorrow nights treat. ;) Plus, that freezer still needs filling so they could be a really good addition. I used to cook those and freeze them years ago, you just forget these things.

I've been following this banana bread recipe for a few years now and I can confirm it's wonderful! It's also easy to 'double up' to make two at a time - once you've tasted it, you'll need more than one! :D
