if you like curry, try this - lamb and aubergine curry:

Ingredients: couple onions, chopped / pepper (red or green), chopped /
courgette, chopped / aubergine, chopped into cubes about 1 cm across / couple cloves garlic, minced / minced lamb / sultanas / mushrooms, chopped / otherveg to suit you, e.g. leek, sweetcorn, peas / curry powder - i use a madras one / seasoning / boullion / oxo stock cube / tsp sugar / enough oil to cover base of pan, no more

    - this serves 4, with rice, you may want to use half an aubergine and courgette.

    1) saute onions in the oil till translucent and add the minced lamb. fry till
all browned off. Add peppers and garlic, cook 5 minutes, then add courgette and aubergine. cook with the lid on till the courgette and aubergine have lost their springiness - about 5 minutes.

    2) add mushrooms and any other veg, and the sultanas. again, cook 5 minutes.

    3) add the curry powder, boullion, oxo cube, seasoning and sugar. Stir well
and leave to cook. It doesn't need any extra water - there'll be enough water coming out of the veg to deal with that. give it 10 minutes on a low simmer, without a lid, stirring frequently. taste for seasoning.

    4) cook for about 15-20 minutes, stirring frequently, and when the amount of liquid looks about right, put the lid on. if you get really worried, turn the
ring out - it should keep the heat ok while you cook the rice. I try to give
it about half an hour once all the ingredients are in, before i plate up.

although minced lamb can be fatty, the aubergine soaks this up nicely and it contributes to the overall flavour. the liquid coming from the lamb and veg means you don't usually need to add any extra liquid to it, although you can if you think its going to catch. you could also add plum tomatoes to this if you like, although i never have.

jcr16 hope the midwife manages to put your mind at rest.As for the lamb mince I use it in samosas.I make a big batch and then freeze them uncooked.A bit fiddly to make but well worth it.

Well just back from a nip to Morrisons and I bagged a few bargains.Heinz beans were only 23p a can so I bunged a case full in the trolley.I'm not a tinned beans fan but hubby prefers Heinz and as they were so cheap I could hardly complain.Managed to get hold of the Be-Ro Home Recipes book and it was only 97p and is full of all those lovely recipes you grew up with.Tiling has ground to a halt as hubby needs to move the fridge/freezer so he's decided to finish it off tonight after the kids have eaten and been bathed etc.

    Hello!

I'm reading my way through, and I'm on page 25 at the minute. I read a few bits here and there before xmas but had to start the thread from the start as it's so good. I feel like I know you all already. Thanks for all the recipes and the inspiration.

I'll be one of the braid and jammy bun club soon :D (There's only me and OH so there goes the waistline! Kids will be a couple of years away yet). I've been desperate for a Panny for about 18 months but not actually bought one yet, but I think I might just take the plunge so I can make all these yummy recipes. Now which one to choose. The 253 was always the one I wanted and now a quick swizz on Amazon and there's a 254 and a 255  Nightmare!

Anyways, hope to catch up with you all soon, was just letting you know I'm here even if I am miles behind..... :o
