  • Hi all, I've been lurking round this thread since the start and loveing all the reciepe ideas. I thought you might like my two fav muffin reciepes. Both of these I ice sometimes with a wee bit of cream cheese well beaten with lots of icing sugar.
    BANANA MUFFINS
    10 oz plain flour (you can substitute a wee bit of flour with some oats)
    1tsp baking powder, 1 tsp bicarb soda
    pinch of salt, 1 egg beaten, 150ml milk
    80ml sunflower oil 3-4oz granulated sugar
    3 large overripe bananas peeled and mashed

    Mix all the dry ingrediants in a large bowl and all the wet in another one, add the wet to the dry and fold in till no visible flour left, don't overmix. Half fill the muffin cases (should make 12) and bake for 20 ish mins at 190-200c

    CARROT MUFFINS
    10 oz plain flour, 1 tsp baking powder, 1 tsp bicarb soda
    pinch salt, 2 tsps ground cinamon, 1 egg beaten
    90 ml milk, 12 oz carrot finely grated, handfull raisins
    90ml sunflower oil, 1tsp vanilla essence

    Make as before and bake as before till tops spring back when lightly pressed.
    For both reciepies if you don't have enough milk or an egg substitute with water, very MSE! The results are not quite so light but if you didn't know you wouldn't notice.

    :D thanks for those recipes Mortgagefree I must try to find some baking time at the weekend the boys are getting cake withdrawals :rotfl:
    I just had *yet another* delivery from thebookpeople of which 2 were muffin books..they have lots of savoury ones in them which is what I'm trying to introduce DS3 to (without much success at present!)
    The ham and cheese ones in Tanya Ramseys Family Kitchen book are lovely but I find I prefer mini muffins when I have the savoury ones.

    Yategirl that winter savoury is now on my to do list too :rolleyes: Sounds rather lush!!!

    Been to 3 meetings/appointments so far today and still have Docs for me to go PLUS Scouts PlUS residents Assoc..I'm already sitting here trying not to doze off :o

    I managed to do a shepherds pie this morning before school so thats for tea tonight and plan to cook a curry tomorrow but have CAMHS in the morning so not sure when I'll be back..they want to discuss *gulp* medication...should be a quick meeting as my answer will be No No and then maybe No some more :rotfl: I only want to see if I can get the melatonin on prescription.

    what were the muffin books Dee? Thanks for the recipes Mortgagefree :) I made cranberry and ginger muffins this morning - yum! Not going to last long :lol:

    Yategirl I love the winter savoury recipe but I cannot abide yeast extract any ideas about a substitute?

    Went to Bury Market this morning.I've been once before and it was okay, nowt special.Got some chicken breasts for the freezer and that was it.I prefer Blackburn, Bury was too big for my liking.Made Chilli and BP's for tea and added some grated carrot to sneak some veggie's in.HM Yoghurt and Bakewell tart for pud.Well the baking tins are empty and barring the apple and plum braid that is cooling.Need to bake tomorrow but cant see it happening as hubby is moving the massive American Fridge/Freezer to tile behind it.Thankfully thats the last wall to be tiled and will be so glad when its all over

    Dee you exhaust me just reading your posts and I always thought I was an active woman until I read about your life!

    mmhhh... you can *just* taste the yeast extract in the recipe... it is not overpowering though... it's only a tsp so maybe substitute with tomato puree and more dried herbs.....

    i made a gorgeous cottage pie for tea , plus 2 portions for me and kids lunch tomoz and 1 portion for freezer.

    and i've just taken up my new voiles i bought for the house. gave my daughter a lesson on how to wond the bobbin on a sewing machine and how it works. so gonna buy some cheap material so we can make a bag or somethign simple together.

    i've felt ill all day so gonna go off to bed in a min i think.

    How about Bovril?? I know it's a veggie recipe, but it could work? Sounds yummers Yategirl, looking at the ingredients, I can't quite believe how far it went! I wonder how it will hold up to DS1, he eats enough to make moving into Tesco's an option :rotfl: Skinny as a racing snake too :rolleyes:

    I have cleaned and reorganised my food storage cupboard :j

    Anyone know why herb carousel contained six bottles of dried mint - some, now laguishing in the bin - dating back to 1999? :eek:

    Mushroom ketchup instead of marmite? I got a bottle today as I had read that it's a useful addition to veggie recipes.

    I had a nice trip out this morning to Northallerton market. It was farmers' market day as well, good natter with friend too.

    I have most of what I need really for the rest of the month, just need milk and fruit, fresh stuff etc.

    In spite of being only supposed to buy what is necessary, I did get a few things. Mushroom ketchup a seasoning in veggie food, green split peas as I can only get yellow ones, fine oatmeal, chocolate gingers off a stall (only £1.20 for a good side bag, reckon 250g at least, loads of seeds for bread, as I'm nearly out (anyone hemp seeds in bread?).

    There was such a fab selection of fruit and veg at such reasonable prices... giant cauli 50p etec etc, free range eggs at a good price, a stall sellling game at what appeared to be reasonable prices too. A shame I couldn't get that stuff home to the freezer... anyway, the whole point is that I'm NOT supposed to be shoving stuff in the freezer all the time! In fact it is fuller than when I started, but that's the baking etc.

    Spoke to Dad, Mum didn't have the hand op as the lump is apparently far enough down not to need it. So now that Dad's ISP is playing the game, I'm at leisure to surf!

    I would love to know how you make butter - I am new to all this - and loving the thread - got so many good ideas and recipes from it - just need to start making them all now!!!
