has any one got any recipes for jars suitable for diabetics??
i'm making loads of jars and OH has just informed me his aunt is diabetic. so need a new idea please :j
Diabetic/low-carb Fudge Candy
Ingredients
13 ounces Evaporated Skim Milk
2 dashes Salt 4 tablespoon Cocoa Powder
1 teaspoon Vanilla Extract 1/2 cup Peanut Butter
3 cups Corn Flakes crushed 1/2 cup Splenda
2/3 cup Nuts finely chopped
Combine evaporated milk and cocoa in saucepan. Cook and beat over low heat until cocoa in dissolved. Add peanut butter, Splenda, salt and vanilla extract. Bring to a boil; reduce heat. Cook for 2 minutes. Remove from heat; add cereal crumbs and work in with wooden spoon. Cool 15 minutes. Divide in half; roll each half into a tube 8 inches long. Roll tubes in finely chopped nuts. Wrap in waxed paper; chill overnight.
Cotton Candy Cookies Recipe
Ingredients:
3 egg whites, beaten stiff
2 tbsp granulated sugar replacement
or granulated fructose
2 tsp orange oil (or your favourite oil)
1 tsp orange rind, grated
Beat sugar replacement, orange oil and rind into the stiff egg whites.
Drop on to lightly greased cookie sheets.
Bake at 325 degrees F for 8 to 10 minutes.
Remove from pan immediately.
Raisins ,dates, nuts etc may be dipped in dietetic
chocolate coating, seperated and placed on waxed paper and chilled until firm.
Clusters may be made by mixing the melted coatings with raisins, nuts, or cereals or just cornflakes/rice krispies to make miniature cornflake cakes
Placed on waxed paper, chilled until firm.
You can make mini meringues with Sweetner instead of sugar
REMEMBER ....... that people with diabetes can eat some sweets

simple fruitcake suitable for diabetics with no added sugar:
600gm any mixed dried fruit except glace or the type dipped in sugar
200gm chopped nuts - I use either pecan, walnuts or almonds (almonds remain quite hard)
250ml water
250 ml red wine or red grape juice
400 gm SR flour
150 ml skimmed milk
2 tblsp olive oil
2 level tsp bicarb
1 heaped tblsp favourite ground spice
preheat oven - 180 C
soak fruit & nuts in wine & water overnight
bring to boil then turn off heat
mix in milk & oil
mix dry ingedients into wet
pour into 9ins tin (I use round silicon one )
put in oven for 30 mins - really does only take this long!
keeps very well - although there's a lot of fruit, it's not too rich. All the ingedients can be weighed and your aunt only has to add the water and olive oil. You could use a small bottle of wine or a normal sized one and she could drink the rest0 -
Thought this idea looked quite good, if anyone still has any jars left, that they haven't filled yet with gold, bums, cakes, nothings, etc,etc,etc, ........ Can't believe they are charging £11.99 !!! plus £4 or £7 postage !!!

candy - thanks .............for a minute there I thought there would be something else to put on my 'must do' list but I'm already doing a retro sweet box for my eldest son (40) - did one each for teenage grandchildren at Easter and Son went mad for them..................lol
Shall do one for the younger son (30 something) for his birthday in April
I have got an empty jar though................lol Empty chicken tonight sauce jar, plus three matching storage jars with cork lids. They don't have narrow enough necks for 'safe keeping' jars for grandchildren so I'll have to wait till we've had all the tartare sauce .................lolMary

I used www.sugarfreesweets.co.uk last year for me muvva.
I've had a look again this year; all the sweets are 96p per 100g & for a rough estimate, I reckon they work out to £1:50 per 100g with p&p added on. Compare that to Julian Graves selling Mintos in 85g for £1:49 & Thorntons Fruit Drops for £1:09 for 65g & they are extremely good value with incredible choices.Full time Carer for Mum; harassed mother of three;loving & loved by two 4-legged babies.
