Trifle sounds like a good idea, but I would have to go shopping as no jelly and even the village co-op would involve me putting real clothes on. I quite like jelly and it is low calories so I might add some to the MrT order.
The other thing I thought of was a fruit fool which is of course custard, cream and fruit puree, only I haven't got any fruit other than the lemon mountain and a few bananananas. Mr Redo did announce last night that he plans to have bananas and custard which sounds revolting to me but is apparently a high treat from his childhood.

You could make lemon curd? Best way to use up lemons is slice up. Freeze and use to pop in gin ☺️Dedicated Debt Free Wanabee 🤓

If I have a surplus of lemons, limes or oranges, firstly I zest them, then slice them up. All then goes in the freezer for future reference.I get knocked down but I get up again (Chumbawamba, Tubthumping)6

Two got used making lemon curd (lush), only then I went off plan and made pastry for tarts which took all of the curd, and stilton/cream/sliced potatoes which was very nice. Mr Redo had banana custard with crushed shortbread last night, and in a fit of rare generosity this evening I made him a ginger sponge with custard. He is working away on the house, despite his snotty man flu.
Syrup from a stem ginger jar, into the bottom of a (bigger than you think - buggeritmilenniumhand and shrimp forgot to put the microwave turntable in the DW) plastic pudding bowl. 2oz butter/sugar/SR flour plus 1 egg and a dash of milk, plus a ball of the stem ginger/ginger powder into the mini blender. Whizz till combined, pour over the syrup and microwave for two minutes. Let is stand for a few minutes before serving with custard. Watch it spew over the microwave if your bowl is too small and salvage enough to make himself happy. The last step is optional.
Jam or syrup works too, we just happened to have the tail end of a stem ginger jar that 'needs' using up.

Ooh never thought about making a ginger pudding. I used to make chocolate ones (half quantity of cocoa to flour) and use ice-cream sauce in place of syrup. I love ginger and after we eat up the ginger cake I made weekend I may have me a go at that 🤓Dedicated Debt Free Wanabee 🤓
