To only just start conveyancing could mean they need to do quite a bit in terms of searches etc and they rely on other people so that could take up to 2 weeks in some places.I’d let them know whatever date you decide on, you need to let your landlord know and to give you time to give notice.
In terms of the rent and saving money etc. remember that rent is normally paid a month in advance but your mortgage a month in arrears, so it's likely that even if you don't hand your notice in until after you've exchanged, you won't have to pay double rent/mortgage.
For example, we exchanged on 25th November and Completed on the 26th (this is rare and you've usually have a bigger gap in between).
I gave notice on the day we exchanged (25th) and made our final rental payment on the due date of the 1st December. But because we completed on 26th November, our first Mortgage payment wasn't due until 1st January, so because we exchanged and completed a day apart, we actually had a period of four weeks where we had both properties, but never had one month where we had to pay both the rent and the Mortgage during the same pay cycle.

I need to hand our notice in to end tenancy but I'm reluctant until I have a date set in stone 🤷🏻♀️Today is our 4th date of entry but ours has been a more complicated sale due to having loads of executors and them not having paperwork for a standard security registered on the title which was paid off over 30 yrs ago and never discharged.Our first DOE was end of July but 2 days before hand we found out about the charge so it was delayed.If I was you I would call solicitor and ask if all paper work etc is all ok and I think if you can afford to hold of with handing your notice into the landlord until you have definite confirmation
I do have a feeling that our settlement won’t go through today0 -

Our solicitor said we would be looking to complete mid Feb and asked us if we had a specific date. We replied with 11th or 18th Feb and she came back asking if 18th Feb would suit.
But then never replied, so now I don't know if we are coming or going 🤔0 -
Just waiting to exchange now. My solicitor has said that he's looking to exchange once he has 'received confirmation of release of funds from your lender'. This happens before completion? I have an existing mortgage an am selling+buying, so am curious how it works...0

We have exchanged this morning!! Can hardly believe it! Completion next Monday 7th and we have booked removals for later in February!
