In line with my determination to be healthier and actually cook this year I am pleased to say I did cook last night.
I had bought some skyr from L!dl as I'd read about it on here. I bought the plain one but I expected it to be like natural/greek yoghurt but after tasting it, discovered it wasn't.
Anyway it had been lurking in the fridge since before xmas so I needed to do something with it.
So, I sauteed a diced onion, 2 cloves of chopped garlic, chilli flakes, lots of black pepper, half a leek sliced, a few bits of past it broccoli and seen better days mushrooms. Boiled up some pasta added to the above with the aforementioned skyr and some pasta water.
Well it was ok but lacking 'something'. I'm not sure what I could have added just to add that 'something'...not cheese, as whilst I love cheese, I prefer it as it is and I'm not that enamoured by cheese sauce on the whole.
Oh well, at least I tried and had LO which I have just eaten cold'I'm sinking in the quicksand of my thought
And I ain't got the power anymore'0 -

I realise that now: I think it would work well in a Lasagne as a substitute for the white sauce, but the last time I tried to make Lasagne it was a complete disaster :rotfl:'I'm sinking in the quicksand of my thought

karcher - It needed some colour I would say - tomatoes being an obvious one (maybe "real" tomatoes and perhaps a few chopped-up dried tomatoes?). Maybe some chopped-up red pepper as well? Maybe some black olives? Well - I would have eaten something like that - but would probably have made those additions.
Just had that courgetti and sauce recipe - first one tried from that cookbook that has only just been published. Nice:) - nom...nom....nice taste/looked good (the tomatoes in it giving it a bit of colour). Both recipe as a whole and the alfredo sauce (as in with other things) to be done again:).
I shoulda realised it would need a bit of "filler food" with it - and, for future reference, think I'll probably do something like spicy baked potato wedges.
EDIT; Karcher - A bit of crunch might have helped as well - so nuts and/or seeds perhaps? I just threw some sesame seeds over my dinner tonight to add a bit of crunch with it.0 -

I forgot to say, I added diced red pepper too, but I agree a fresh tomato would have made a difference. Funnily enough I nearly did but I didn't want it to end up a tomato'y sauce iyswim...but then if I'd added it late on, it wouldn't!?
All a learning curve this cooking lark(not the 'for one' bit, I've been doing that for years), I mean just making the effort to actually cook :cool:

I had the fish finger butty yesterday with one side spread with garlic mayo and one side tom sauce, and some cheese.
So that meant the hm gf pizza today,not much cheese left, but still tasty, with piri piri chicken peppers onions and mushrooms and chilli flakes. Just had a warm mince pie, with cream.
Lunch was lo chicken from Sunday with tomato and onion sandwich and an apple rice pot.
I think I've eaten around 5 clementine s too, hoping to give myself some vital c to get shut of this cold.
Caronc I bet you made your nephews day, there's nothing nicer than someone else cooking when you've had a long shift.Focus on contribution instead of the impressiveness of consumption to see the true beauty in people.0 -
After the pizza .... it was hours before I remembered the trifle and had another quarter... OMG it's gorgeous.... so it was less than another hour before I had another quarter. Only one quarter of it left now.
Eating a whole quarter each time was "too much", it'd be better as 5 portions .... but when you've got to eat it all, alone, you big up the portions and go for it
Pack of 6 Sausage rolls not even opened! I really don't wish to freeze all of them .... but I can't eat two just so I only freeze four. They are dated today and as they're pork I'll stick to that ... so it'll be six in the freezer a bit later
It's hard trying to eat everything that enters the house on your own.0 -
Hello, thanks for the welcome everyone, hope you all had a good New Year's.
Yesterday was:
Porridge, made with milk, blueberries, banana and cup of (large) tea with hangover...
Lunch (had family over) beef brisket in the slow cooker with celery, swede, turnip, onions, carrot, and broccoli, green beans, roast & boiled potatoes, with Yorkshires. Slightly incinerated Yorkies but nobody cared as I was plying the drink! Followed by lemon drizzle cake, or 'seriously chocolate' choc cake/cream or brandy snaps with icecream (everyone picked what they wanted).
Tea - so full, it was a bit of strawberry cheesecake icecream.
And a slug of 30% sloe gin with lemonade. Hic!
Today, slightly hungover:
Porridge with milk, blueberries, banana, large tea. Had to chuck half away as the dog decided to vomit mid-way through breakfast, and somehow didn't fancy eating it! Ergh....
Lunch - chicken soup with super seeded wholemeal bread, water, and finished off the strawberry icecream plus a slice of lemon drizzle cake....
Tea - still full, but, a very healthy bag of sweeties followed by cocoa....
Obviously, my diet is not quite working, However, I felt very virtuous yesterday insisting that someone take the chocolate cake remains away with them."...when you have eliminated the impossible, whatever remains however improbable, must be the truth..."
