My Two Favourite Cakes - what are yours ?

    This is my families favourite, the recipie was given to me by my dils grandmother (84years old) who's mother had given it to her when she was 16.

    It was written in beautiful handwriting and simply called Fruit Cake. I renamed it Alice Cake in her honour
    Alices Fruit Cake


    Makes 1 x 8” round or 2 x 1lb loaf tin lined

    Oven 160*c 11/4hours ish

    350gm dried mixed fruit include some cherries
    ½ pint milk
    225gm Marg
    175gm sugar
    2 teasp mixed spice
    1 teasp bicarb

    Place in a pan and bring to the boil gently stirring so it does not stick. Take off the heat and leave to cool.

    Then add 2 beaten eggs and 350gm Self Raising flour stir well and pour mixture into tins.

    Bake in normal way, test to make sure centre is cooked. Leave to cool. Better if you can leave them a few days before cutting.

    Seriously, even if you are not on a gluten free diet get the gluten free flour from sainsburys and make a chocolate cake, but slightly undercook it. Turnd out all nice and soft and DELICIOUS :)

    Has anybody got a really simple recipe for muffins and scones please. I am rubbish in kitchen so needs to be FOOLproof

    I use this one posted by thriftlady, and it is an excellent recipie.

    Basic Muffin makes 12

    9 oz(2 cups) plain flour
    1 tbsp baking powder
    1/2 tsp salt
    3-4 oz(1/3-1/2 cup) sugar
    1 egg(I substitue 3-4 tbsp milk as dd is allergic to egg,works brilliantly+keeps cost down )
    8 fl oz(1 cup) milk
    3 fl oz(1/3 cup) melted butter or veg oil(I use oil-quicker,cheaper+healthier)

    Combine dry ingredients,mix wet in another bowl,then combine the two making sure you don't overmix.
    spoon into greased muffin tins(or use paper cases-I'm too mean for these!)
    Bake at 200c for 20-25 mins

    For coconut and cherry I add 3-4 oz coconut and 3-4 oz chopped glace cherries.I also usually add the same amount of plain choc chips-really yummy.I actually use a set of US cups,so its 1/2 a cup of everything that's why it's not very exact.
    Someone suggested using coconut milk instead of cow's milk,I think that would be great.I think fresh cherries would be lush too,but they'd be moister-and more expensive It occurs to me that if you want a really luxurious muffin use chopped posh chocolate instead of chips.You'd get different sized pieces in each muffin...hmmm.

  • Its my OH's birthday tomorrow so I thought I would make him a cake (aaaah). I have got plenty of eggs, sr and plain flour, baking powder, marge, walnuts and choc chips.

    I was going to make him a coffee and walnut cake (inspiration for an easy recipe required please!), and make some chocolate brownies to take into work. Only problem is, I forgot to buy cocoa. Any ideas on what I can make instead (and not fairy cake that will get him laughed at!)

    if you have walnuts how about carrot cake? although u would need the stuff for a cream cheese topping.

    If you want coffee cake this should work - just chuck your walnuts in it or on the top :) good luck
    110g sr flour
    110g sugar
    110g butter
    2 eggs
    2 tsp of instant coffee in a bit of warm water

    or make a plain sponge (just remove the coffee bit) and put a coffee butter cream icing on top?

    THIS IS A GREAT RECIPE

    mary berry recipe coming up

    6oz,175gsoft marg
    6oz, 175g castor sugar
    3 eggs beaten
    6oz,175g sr flour
    1tsp baking powder
    2oz,50g walnuts chopped
    2tbsps coffee essence mix all put in 2x8inch, greased and lined tins
    30-40mins @ 180c
    icing
    3oz,75g soft marg, use soft marg in sponge too
    8oz,225g icing sugar, sieved
    1tbsp milk
    1tbsp coffee essence
    cream marg and icing sugar then stir in milk and coffee essence, sandwich cake with 1/3 icing, spread rest over top and sides, and decorate with 2oz walnuts will freeze for 3 months, i love mary berrys recipes as you just bung it all in a bowl

    if you have golden syrup and oats you could make a batch of Twinks hobnobs for DH to take to work - they are a definite winner!
