    OK, back to the drawing board, but if you click on this link you will see the cake and the remains of the biscuits. When making a cake for a future event (even for two hours hence) with menfolk around, I often make a batch of something they CAN eat, there's a better chance of keeping them off the main event.

    There's a pronounced dip in the middle - no idea why - and it is not a glamorous cake. It's all about taste and texture. I will try to get a photo of it cut and being enjoyed. This is now the fourth time I've made it, and I've learned to grate the lemons - or get a willing child to do it - before I start mixing. The other thing is you're left with 3 rindless lemons - all you can do is squeeze 'em for juice.

    The mistake I made this time was assuming that the two packets of ground almonds I had were 250grams each. But no ! They were 200grams each, and by the time I discovered this I was making the thing and decided it would simply have to be 50 grams short. I bunged in a little extra polenta instead.

    My two new favorite cakes have to be Lemon and Poppy Seed - delicious

    Lemon and poppy seed traybake

    cake:
    41/2 oz soft baking marg
    4 1/2 oz caster sugar
    6oz white self raising flour
    2 eggs
    1 1/2 teaspoons baking powder
    3 tbsp milk
    finely grated rind of 1 lemon
    1 oz poppy seeds

    topping:
    4 oz granulated sugar
    juice of 1 lemon

    12x9" traybake tin lined with foil and brushed with oil. Preheat oven to 180c.

    Beat all cake ingredients for about 2 mins until smooth. Turn mixture into tin and level top. Bake for 20-25 mins until golden brown and showing signs of shrinking away from sides of tin. Mix together granulated sugar and lemon juice and brush topping over surface of the hot cake while it is still in tray and foil.

    Our other favorite is Key Lime Pie - Making that one for tea tomorrow....

    Key Lime Pie

    Serves 6-8
    Preparation time: 20 mins.
    Chilling time: 1 hour

    75g (3oz) butter
    225g (8oz) digestive biscuits, crushed
    300ml (1/2 pint) double cream
    juice and rind of 4 large limes
    218g can Nestle Sweetened Condensed Milk

    To decorate
    whipped cream and lime slices

    1. Melt the butter, stir in the crushed biscuits. Press into the base and sides of a 20.5cm (8inch) deep, loose-bottomed, fluted flan tin. Chill.

    2. For the filling, whisk together the remaining ingredients until thick and creamy. Spoon over the biscuit base.

    3. Chill, then just before serving, pipe the whipped cream around the edge of the pie and decorate with the lime slices.

    I've recycled this thread as I wanted to ask a question about a coffee and walnut cake.. firstly does anyone have any easy recipes and can I make this in one tin?
    All the recipes I've found have been using 2 round tins and I only have one round or one loaf type tin, either will be fine, as long as it cooks okay in them.
    I've had a run of bad luck with cakes the last few I've made. I've used my old bero book, but most just haven't risen:confused: not sure why as I used to make them okay.
    Not sure if it's the type of flour (just use shops own brand) or the silly oven we have. It's a combi oven which I"m not keen on. We had one before which was great, no problem, but this one just doesn't seem to cook properly sometimes.

    Anyway, if anyone can help with the tin thing or recipes that would be great, also any date cakes?

    When it asks for 2 tins I usually just stick the lot in my one deeper one (about 8 or 10cm deep) then cook it a bit longer, slice through the middle to add the filling. You could bake 2 one after the other. There is a traybake type recipe here http://www.bbc.co.uk/food/recipes/database/coffeeandwalnuttrayb_6332.shtml which is just using one tin you could use coffee instead of essence. It states a 9" tin but an 8" should do.For instead of coffee essence - make up strong mixture with instant coffee 3/4 teaspoons in the cake and one in the icing should do it.

    As for ovens, my last one was useless for cakes! Actually it was useless for most things, I found out I could cook when I got rid of that oven.

    I love carrot cake - yummy - Tescos carrot and orange cake is fab.

    Also like Delias lime and coconut cake, and a yoghurt and coconut cake I found the recipe for in a Le Creuset cookbook - it's delicious.

    The more I bake the more I think shop bought cakes are a disappointment (not that I'm a good baker, but just the taste and texture is so very different to home made).

    Battenburg I would still buy though, double yum.

    Thanks.. I tried a two tin recipe once before with one tin, but I seemed to be cooking it for ages and it just wasn't cooking properly.
    I really need a proper oven again, been without one for years now.
    Anyway, will give that a try, thanks again.

    I love Carrot cake - which I've never attempted myself. The other favourite is 'my piece de resistance' - Walnut cake sandwiched with American Frosting, covered top and sides with it and then halved walnuts pressed into the frosting on the top. Usually only gets made on 'highdays and holidays' and even then kept well away from the grandkids.

    My favourites are double choccy muffins that have about a zillion calories in them when I make them (see below) and any sort of lemon cake so I will definately be trying Amanda40's lemon poppyseed traybake above! yum

    Mines is ginger cake & carrot cake, theyre much nicer than any shop bought cake Ive ever tasted.:D
