  • if you have walnuts how about carrot cake? although u would need the stuff for a cream cheese topping.

    I have a bag of carrots, a couple of oranges and half a tub of Philly light, would that work?

    If you want coffee cake this should work - just chuck your walnuts in it or on the top :) good luck
    110g sr flour
    110g sugar
    110g butter
    2 eggs
    2 tsp of instant coffee in a bit of warm water

    or make a plain sponge (just remove the coffee bit) and put a coffee butter cream icing on top?

    Sounds good - whats the easiest way to make butter cream icing? I can never get it right!

    Ok i have a small loaf tin i bought on a whim at the shops today, but im determind for it NOT to become another useless kitchen item i buy and never use.

    Anyone got a good recipe for a nice cake?? im thinking something with fruit and nuts?? maybe walnuts and banana?? i dunno im totally open to idea's at this point i have most of the ingredients for most cake type recipes i think... but till now ive only made fairy cakes and i think im finally ready for something bigger.

    Oh its a 9cm X 19cm tin if that helps??
  • How about a Banana Nut loaf? It's in american measurements so volume and not weight of the sugar, shortening and flour. If you want to convert it, this is a good site to use. Cooking Conversions HTH

    Banana Nut Loaf

    1c.sugar
    1/2 c. shortening
    2 eggs
    2 c.sifted flour
    1 tsp. baking soda
    1/2 tsp salt
    2 mashed bananas
    1 tsp vanilla
    1/2 c. nuts optional

    Cream together sugar & shortening. Add eggs, beat till well-mixed. Sift together flour, soda, salt. Add to shortening mixture. Add bananas & vanilla. Bake in a greased loaf tin at 325F degrees 1 hour.

    I use pound cake recipe (not the whole pound, obviously, unless making lots to freeze :rolleyes: ) in loaf tins and add fruit or nuts depending on what I feel like. Apricot cake seems to be popular... stir in apricot jam instead of the milk, then chop apricots into the tin as you put the mixture in. Make sure you wait until the cake is completely cool before you try to get it out of the tin - it's probably best to line it too, as I find even with non-stick loaf tins, things stick in them :o
