    what about:

    Healthy Banana Cookies
    INGREDIENTS:

    • 3 ripe bananas
    • 2 cups rolled oats
    • 1 cup dates, pitted and chopped
    • 1/3 cup vegetable oil
    • 1 teaspoon vanilla extract


    DIRECTIONS:


    1. Preheat oven to 350 degrees F (175 degrees C).
    2. In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla.

    3. Mix well, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet.

    4. Bake for 20 minutes in the preheated oven, or until lightly brown.


    Banana and chocolate chip brownies

    Low Fat, Vegetarian

    500g ripe bananas
    125g plain flour
    125g wholemeal plain flour
    2 tsp baking powder (salt free)
    50g ready to eat stoned prunes pureed with 50g water
    2 egg whites (medium eggs)
    1 tbsp skimmed milk
    125g dates, stoned, chopped
    50g chocolate chips
    75g unsweetened, chewy dried banana chips


    Preheat oven to 180c, 350f, Gas 4
    Mash bananas in a bowl. Add flour, baking powder, prune puree, egg whites and skimmed milk and mix together.
    Stir in dates and chocolate chips.
    Pour into 18cm square lightly oiled and sprinkle top with banana chips.
    Bake for 40 -45 minutes until a skewer inserted into middle of cake comes out clean. Allow to cool.
    Cut into 16 squares. Store in an airtight container for up to 5 days or freeze for up to 6 months.


    Fudge Cookies

    100g of dried chopped dates
    100g of drinking chocolate
    100g of sr flour
    2 teaspoons of baking powder
    4 tblespoons of splenda
    1 teaspoon of vanilla essence
    1 pack of quark

    mix togther all dry ingredients (not dates) and add vanilla then dates. gradually mix in quark. if mixture is to dry add some milk or water. when all mixed drop or mould teaspoons of mixture onto baking trays sprayed well with frylight


    Coconut Fruit Balls


    Ingredients

    • ½ cup finely chopped dried apricots
    • ½cup finely chopped dates
    • ½ cup finely chopped sultanas
    • Desiccated coconut
    • 2 tsp cinnamon
    • 1 tbs condensed milk


    Directions

    Combine finely chopped sultanas, dates and apricots in a small mixing bowl.

    Add enough condensed milk (roughly a tablespoon) to make it tacky so the fruit sticks together more easily.

    Place a teaspoon of mixture in palm of hand roll to create a ball. Dip in tray of coconut and refrigerate before eating.

    8oz dates
    1/4 pt water
    few drops vanilla essence (optional)
    4oz SR flour
    1 level teaspn bicarb of soda
    4oz porridge oats
    6oz caster sugar
    4oz margarine

    Grease a shallow 7 x 11 inch tin
    Preheat oven to Mk 4, 180 deg C
    Chop dates and simmer with the water until soft and pulpy. Add essence
    Rub marge into flour and bicarb, stir in oats and sugar
    Put half oat mixture in tin and press down firmly.
    Cover with dates
    Top with rest of oat mixture and press down
    Bake for 20 -30 mins

    Serve warm with icecream or cold as a cake. Its a little bit messy and crumbly but very nice
  • Another idea - cream cheese and date sandwiches.
    Use wholemeal bread, Philadelphia-type cheese and dates snipped up into little pieces using kitchen scissors
    Usually popular with both children and adults.

    I use dates quite a lot- and now found I'm fond of date syrup too (no I don't overdo it, my digestive system is fine...). I've put them in the coconut rice pudding that was posted here recently. You can completely do without the sugar then, they mostly disintergrate and sweeten plenty.
    I also like dates cooked in porridge (its the only way I like porridge!).
    I put them in flapjacks, with couscous, and to replace sultanas in other recipes. Sticky toffee pud is a great 1. Can't think of anything else right now. Mmm.

    How about Date Loaf, low fat recipe but it's lovely spread with butter!

    !5 oz plain flour
    10 oz sugar
    1lb chopped dates
    2 oz margarine
    2 eggs
    1 1/2 teaspoons bicarb
    9 fluid oz of boiling water

    Disolve bicarb in boiling water, pour over the dates and leave to cool. Beat margarine and sugar together add eggs, gradually add date mixture and flour. Mix well. Grease and line two 1lb loaf tins. Pour in mixture, make a dip along the middle, cook at 180 C for 1 1/2 hrs. Watch that the top doesn't burn, cover with foil if necessary. Best left a couple of days before you eat it. Keeps well in a tin. Slice and butter.

    Yes, datey cakes are lovely. I've made a ginger and date one (recipe lost), and also a few dates in banana bread/ cake is tasty.
