    Spicy pumpkin (or squash, any kind) soup:
    1 tablespoon oil
    1 smallish red chilli (or a pinch of dried chilli flakes), chopped, remove seeds if you like
    1 onion, chopped
    I stalk of lemongrass, or a good heaped teaspoonful of the stuff in a jar
    2 teaspoons Thai curry paste, either colour
    1 kg approx pumpkin or squash, (peeled and cubed weight)
    400 ml veg stock (I use the Marigold one, or make my own with peelings etc, Marigold today!)
    400 ml tin of coconut milk, I use the low fat one, but either kind is fine
    Squeeze of lime juice, if you like
    Coriander leaves and chopped spring onions to garnish, if you like
    Salt and pepper

    Heat the oil in a large pan, cook the onion, chilli and lemongrass gently for a few minutes, then add the curry paste and pumpkin cubes and cook for a few more minutes. Do not allow to burn or brown. Pour in the stock and coconut milk, bring to boil and simmer for about 20 minutes or until the pumpkin is soft. Then either liquidise or whizz with stick blender (which is what I do), add a squeeze of lime juice if you like, check seasoning and that is it. If you like you can garnish with a topping of coriander leaves and chopped spring onions, but that is up to you!

    This recipe was passed to me by a friend years ago and has been subsequently altered by me, so I couldn't just post a link on this occasion :)

    Took DS2 to footie. Treated the boys to a burger each, DH and I took sandwiches and a flask.
    Roast pork for tea, need to do the mealplan for the week.
    Heating has gone off and I havent lit the fire - its cold in here!
    Have got the new toilet for the DS loo, hoping we dont need a plumber.

    Need to finish my spreadsheets and see where I am, have a feeling I might be over budget a bit. I am also down on my hours for job no. 2 after taking Dad to hospital last week.
