Cooking for one

I`ve done a lot of driving this weekend and had grandchildren here, somehow managed to eat quite well, until I got home today at 5. You name it, bread and butter, kefir and berries, nakd bar, frozen hm ready meal and good job it was a small one. Thought I would finish the cream, so I whipped it and piled the whole darn lot on top of the largest scone I could find in the freezer, that plus dollops of jam and a small red wine and I also had some strawberries. Now feeling absolutely overstuffed. I think my blood sugar must have got a bit low as I just dived straight into food as soon as I got in. Drat. It was a bit of tail wagging the dog this weekend and I am cream crackered. I`ll be glad to be back in solo mode this week, no child entertaining, no extra cooking and eating what I want when I want0

Meals here still rather "scratch" at the moment. Though the kitchen is in place - I'm well aware it's got to be re-decorated shortly (complete with clouds of dust I guess from loads of sanding - because of a previous workman that didn't do the preparation properly).
So - today's lunch was assorted leftovers. Dinner was cheese and apple/a couple of slices of sourdough bread/a coconut yogurt (in chocolate flavour) and a glass of rice milk.
I'm still summoning up my nerve a bit to use my new cooker - as it's rather different to the extremely basic freestanding one I've just chucked out. So I've "christened" the hob, but not yet used either of the ovens. Guess my dish to "christen" one of the ovens with will be making some more of my own bread again soon.0 -
I did a 3 mile walk to two beaches and back .... so arrived home pretty kn4ckered... so I just put some cheese and a tomato with salad cream between two bits of bread and shuffled to the sofa to scoff
Then some chocolate finger biscuits.0 -
kittie - sounds like an exhausting weekend no wonder you felt the need for sustenance
moneyistooshorttomention - sounds as though the end is beginning to be in site, I'm sure you will get to grips with your new oven in no time:)
PN - one my favourite things in life is a walk by the sea simple pleasures
I finally managed to put the crackers down.......:) only because I wanted to my dinner which I'll have just shortlyI need to have a think about meals until Thursday with my son being home I've kind of lost track of what's in the fridge and then need to get my "catering" hat on for the weekend:eek:

Hope everyone had a good weekend
After a bit of a rubbish day yesterday, today was quite nice! I went out for a bit of shopping this morning and treated myself to a couple of summer tops. Only cheap but I'm happy. Went to meet a friend in town and had a nice chat and some chips in the pub. Then popped in to drop an anniversary gift off for some other friends and ended up staying there for a few hours of games and cake. I didn't get much done that I planned but had a nice day so nevermind.
Food today had been a ham sandwich, some chips, a piece of cake and some pretzels. Not healthy but no cooking required.0 -
Does anyone else struggle with the weight piling on through comfort eating and lack of time / motivation to eat better? It's really getting to me ATM, but when I feel down I don't want to go out or do much of anything so I eat instead.
I'm quite short - so can't eat a lot without putting on weight, many 10 year olds tower above me.
The only way to do it is to realise when you're eating calorie-heavy things .... and be mindful for a few days. I tend to only manage it by not eating a lot .... interspersed with some "what the heck" days
I weigh about 8½ stone at the moment (119lbs/54Kg). It's tough keeping at that, especially as I appear to eat lots of sweeties and pies and chips ... on balance though, I don't eat them all the time.0 -
Yesterday I had:
Breakfast: 2 toast/2 scrambled eggs, squirt of brown sauce.
Lunch: A quarterpounder cheeseburger in a brioche roll and some chilli ketchup I made on a tablespoon as that's all I needed.
Tea: A cheese/tomato/salad cream sandwich.
Today I've had nothing to eat so far - but I made a tomato sandwich for lunch and put it in the fridge.
Later today I'll probably boil some eggs and make up some egg/tomato sandwiches ready for teatime.0 -
Afternoon all, bit cooler today so abck to normal weather
No breakfast today, did not fancy one at all despite 2 LO doughnuts weeping red stuff into the packet and needing to be put out of their misery [PS did that this lunch time]
Because it was my birthday and I'm a holder of the M & S Sparks card they gave me £5 to spend when I used my card, so off I toddled to M & S this morning to see what a fiver would get
It seems I hit a jackpot there, the two dine for a tenner offer is on again, thus a fiver got me 2 pork chops with sage butter, 4 potato rosti, 1 puff pastry apple lattice pie and 2 bottles of sparkling Mexican lemon [STRIKE]fizz[/STRIKE] presse [could have had wine but verbotten due to my health [or lack of it]
Good going I thought at least two days main meals for £2.50, and still not spent my M & S gristle burger voucher yet
The luck continued, mooching round Asda, they have some fresh veg all reduced, not RFQS, to 20p, I chose parsnips and leeks, already have carrots and the spring greens I did not fancy. The veg will keep for a bit in the fridge
Lunch was quickly chosen for me, found a mis priced YS :j sliced corned [STRIKE]dog[/STRIKE] beef down to 1.20 from it said £2 , but pack was clearly marked £4. The weight was 370 grammes which is more than a tin 340 grammes, and it is sliced for me, will keep for a few days I reckon, if I don't post again it did not keep
Lunch was corned beef , baguette, tom & cuc with mayo, and the two [STRIKE]bleeding[/STRIKE] weeping doughnuts followed
Dinner will be yet more CB, with eggs & chips and I think a touch of healthy grilled tomatoes possibly with side splodge of brown sauceGardener’s pest is chef’s escargot0 -
So far I've been on an unplanned scoff-fest.
Ate my "lunch" tomato sandwich by 10am and have been dipping into the bag of tortilla chips a few times .... and then I hit the Pot Noodle stash
Oooh and some chocolate fingers.
And it's not even 3.30!
I need to check the date on the corned beef bakes I bought ...better do that now while I remember! Update: 12th, so better eat one today for tea, with mash as I bought spuds from A1d1's 29p bags. We'll see how that goes... could always freeze them, but I don't want to.0 -
Happy Birthday Farway:bdaycake:
It's still blooming freezing here today though there was the odd short sunny spell. The temperature never got into double figures:(. I had make a salady type lunch but had to have a cupasoup as I think due to the cold weather it didn't satisfy me.
Dinner tonight is jerk spiced chicken wings with roasted veg and a baked sweet potato. It looks as though it's to be cold and wet for the next few days so I think it will be back to more wintery food, I've lots of spuds so might make a pot of mash and decide from there what to have with it:).
On a more summery note my first tomato seedlings have sprouted and I planted some bean and pea seeds (indoors) today.
