    I love cauliflower rice too but it's normally £1.25 for a premade bag .... put a cauliflower into the blender to process would be met with a firm no.

    If you've got one and a grater, you can do it floret by floret, by hand, if you're motivated enough and if you have a plan to use up the rest of the huge soddin' thing :)

    The trouble isn't grating 3-4 large florets.... the trouble is staring at the rest of the beast and thinking "how on earth will I feel like fancying all of that in the coming week".

    You can grate frozen florets too .... if you care. Toss the stalk stubs back into the freezer to be lobbed randomly into veg mixes or slow cooker things. But ... it's that "motivation" that's the real issue, not what one can/can't do :)
  • I cant manage to buy my flour from supermarkets either.

    I think I could get organic white.

    However, I want organic wholemeal. To my astonishment - I'm having to go to my local wholefood store to buy that. I don't understand - as surely that is SO basic that even the tiniest/most rural of supermarkets ought to sell it. But - nope.....

    I've come to the conclusion that my CFO issue is that I don't actually cook.

    Only me so cba to cook some lovely sounding concoction of food just for me... I eat toast or sandwiches instead.

    Let's face it, It's easier and involves minimal washing up...

    I've been attempting to CFO, especially since this thread started..thanks caronc :)...but slipped back into non cooking mode because sandwiches are just so much easier :o

    Having a rather shoite time of things atm so it's reflected in my: I'd love a good meal but toast is easier and I won't complain to myself for the lack of a decent meal :)

    Try at least to put something interesting on the toast :)

    I tend to revert to a toast-based diet when stressed. If really stressed, toast with butter and nothing else. However, if less stressed:

    Sliced tomatoes arranged on toast and grilled
    Mushrooms on toast
    Avocado on toast with a poached egg
    Goat's cheese and rocket on toast
    Camembert and salad on toast
    Cream cheese and cucumber on toast
    Bacon and tomato on toast

    The possibilities are endless, and some of them even feel like cooking :)

    karcher - nowt wrong with a sandwich or "something" on toast been my go to many times and so easy if my mood is low. Sometimes CFO is all about the easy/suits the moment option :) Me I cook because tbh there ain't much else going on in my life but we all have our own ways of coping during rough times :cool:

    I've put everything an anything on toast...:p

    It does become slightly tiresome after 25 years though :o

    Maybe you should write a cookbook :)

    And make sure you buy nice bread.

    Depending on your budget you could try a recipe box for a bit - I've found mine has got me back into the habit of cooking. I ordered one for when I knew I'd be off work for a couple of weeks after a minor op and wouldn't be up to shopping/thinking, and when I ended up being off for a month it was great knowing I didn't have to worry about running out of stuff. It's also helped with the return to work and suddenly having to fit in something other than reading library books each day ;) PM me if you think it might be of interest as I think I have a discount code I can let you have. Each meal feeds two (or more - portions are quite large), but if I don't have friends or family visiting I either freeze leftovers or some of the raw ingredients, or I eat leftovers the next day/for lunch.

    A lot of my diet is toast-based simply for the exact same reasons karcher's is. It's there, it's easy.

    Anything other than toast is just "too bothersome"- even the concept of buying "nice bread" for the toast is just "meh".

    :)

    And you know what? There's actually nothing wrong with that at all.

    And we shouldn't feel food-shamed about it. I don't.

    Remember: Just toast is at least "one up from" anorexia :)

    I was trying to suggest ideas that might lead towards cooking. And also improved the nutritional value of the toast... We've probably all done it at times, but it isn't ideal long-term from a health perspective. Adding protein, fats and vegetables rather than sugar will improve that.
