Cooking for one

    yeah its only a mile away so a few mins drive. I very rarely go though because I love chippy chips just too much so if I avoid the place I cant be tempted :D
  • Bit of a cooking challenge coming up soon - for about 3 weeks shortly I won't have a kitchen to use basically. In between old kitchen going and new kitchen all fixed in place.

    I've bought myself a dual electric hotplate to help me through that. Almost think I should have kept that copy I once had of "Cooking in a bedsit" - as it will be much akin to that. Only I eat a very different way these days anyway.

    So - I'll only have that hotplate/a tiny bit of worksurface and my most basic kitchen tools only to hand during that time and I'm wondering what I'm going to cook.

    Dinners are the thing.

    So - theres:
    couscous salad (of course...)
    stirfry
    pasta and sauce
    bread/cheese and salad

    and then I start getting a bit stuck - with not having an oven to use or much equipment to hand. My fridge and freezer will still be up and running thankfully whilst this is going on.

    Any other (vegetarian) things anyone can think of for dinner during that time?:)

    ...and...no...I don't want to think in terms of eating out here....as the choice of places available here is more than a little limited to say the least and I've yet to find anywhere (take-away or restaurant or pub) in walking distance that I like.

    Evening all not sure what to have for dinner beef and something. I'm off work until Monday so naturally I have a runny nose, sore throat and it's chucking it down.

    Enchiladas

    I never use my oven/hob. Lived here nearly 3 years now, not used either once.... and don't plan to, ever. Got the mini oven just for heating up pastry items (sausage rolls, pizzas, pies) ... everything else is nuked or slow cooked.

    Ideas/Vegetarian:

    Omelettes.... all sorts
    Fried Egg/Chips (well, sliced/fried potatoes shallow fried)
    Veggie Curry
    Veggie Chilli
    Veggie Sausages/Chips
    Anything that looks fish cake shaped, but has a variety of names, but comes down to things like "spicy bean burger" ... with chips of course.
    Frying pan pizza: Make/buy a base, shove stuff on top, fry it in a dry pan.

    Actually, talking of dry frying, I've been known on many an occasion to simply mix flour and water with some random herbs/spices/garlic, shape it into a bready shape and dry fry that as an accompaniment for chilli (calling it garlic bread)

    Quorn (and Morrisons) do a veggie chicken nugget.... they're nice. They fry.

    Evening everyone,
    Been "missing in action" today thanks to a horrible vertigo flare up first thing:o Needless to say plans to have friends round for lunch were scuppered and there's not been much cooking going on. Returning son won't be home until late so will eat en route so I'll be having something involving LO beans from last night not terribly inspiring but will fill the gap :D Soup from LO root veg mash didn't get made so it will just be getting lobbed in the freezer

    aww caronc hope you feel better soon thats a real shame you missed your lunch with your friends.

    Thanks Nelski unfortunately it's par for the course of living with Meniere's :( Hopefully I'll have my mojo back tomorrow:)
