what sort of choice would you think appropriate?
a non binding referendum with say half a dozen options?

I doubt that is practicable (6 options) and would probably need an proportional representation system to be viable.

I suspect that the UK Government reach a possible agreement based on some variation of the EEA and will say that that is the best deal they can negotiate. I very much doubt the EU27 will offer alternative deals. Of course there may not even be an agreement.

But if there is an agreement on the table the UK Government could put that to a vote with a clear statement that if rejected we would leave the EU without an agreement. It would effectively be a vote on a hard Brexit vs a soft Brexit.

Personally, I think they will not hold a vote since it will only cause more divisions in the party.

Seems reasonable that Westminster debates and votes on the agreed exit terms. Just as the other 27 member states will.

Such a policy would immediately weaken the govts negotiating position.

How? This would happen after the negotiations had been completed.

Without draft agreement there would be nothing to vote on, both the EU and UK know that if this is the outcome the UK would leave wafter two years.

With a draft agreement ratification of that agreement would need to take place by the EU Council by Super Majority Qualified Voting; and by the UK using whatever constitutional method applies in the UK. So Parliament could do this with a referendum if it wanted.

What an utterly delusional view. The new world requires us to step up to the plate

Absolutely, not to go on strike, forget to grit the motorways and get tied up for decades arguing with nimbys.
