five day old mince - That's chancing it. Due to the far greater surface area, bacterial activity is liable to be a lot higher in stuff like mince.
And piping hot is garuntee of safety - A lot of common contaminents leave secondary toxic byproducts that cannot be destroyed by heat and are often far worse than the bacteria that originated them.0 -

The fresh ingredients were probably already many weeks old by the time you bought them anyway. so long as there is no bad smell, and it looks ok, it is probably fine. The colder it was stored at the better too.0 -
