mary berrys chocolate cake
in a bowl mix 1 rounded tablespoon cocoa with 2 tbsps hot water, let it cool
then add to the bowl
4oz soft marg
4oz sugar
2 large eggs, beaten
4oz self raising flour
1 level tsp baking powder
beat well for 2 minutes, divide between two lined 7 inch cake tins and smooth the top
bake 180oc gas 4 25-30 mins
turn the sponges out to cool, removing the paper
when completely cold sandwich with cream or buttercream
mix 3oz soft marg with 8oz icing sugar, beat well and use to fill the cake
its best if you can use two deepish tins as the cakes will rise better0 -

Cheers tm....I have to say that this is pretty bombproof as a recipe (as long as you don't microwave it!), and could easily be tarted up with a bit of icing / cream filling or whatnot. If you lend someone a tenner and never see them again, it was probably worth it.0 -
I would go for Twink's recipe. It is a pound cake which means equal quantities - 2 oz of SR flour, sugar, butter or marge, to 1 egg. Make sure the egg and butter have been out of the fridge for an hour or so, especially the butter to make sure it's really soft.
Bung it all in together with the flavour you want and mix it up well.
Fantastic! :j
Ge the kids to make Twink's hobnobs. Easy as pie and they will just luuurve them.0 -

Friend made chocolate cake for her son last week - done a Victoria sponge, sandwiched with cream and jam and covered in chocolate fudge icing. She then made out his name in White maltesers and had then alternated with chocolate buttons all the way round. She made it swiss roll tin size so there was enough for everyone....No Longer addicted to Boots! - Well not today anyway!! :blushing:

I never use greaseproof paper. Just grease the tin then put 1/2 teaspoon of flour in and pat it round until all the greased areas are covered. Turn it upside down over the sink and tap the bottom so all loose flour is removed, then put cake mix in as normal - never had one stick yet!0
