    Seriously though, try the chocolate yoghurt cake as it's very tasty and really easy. ;)
    If you lend someone a tenner and never see them again, it was probably worth it.

    White Chocolate Buttercream Icing

    This makes *loads* - I halved the quantities to cover an 8in square cake.

    1/2lb unsalted butter, softened
    12oz white choc, melted
    1 cup (equiv 7 fl oz in volume) icing sugar
    1 tsp vanilla extract

    Using a mixer, beat the butter at medium speed until creamy. Beat in the melted white chocolate. Add the sugar and vanilla, and beat at low speed until light and fluffy (when you first add the icing sugar the whole mixture will separate and look horrible and curdled - don't panic! You need to beat for about 5 minutes and it will gradually get smoother and lighter in colour)

    This is quite an easy cake to make but is definitely for special occasions as it has 12 :eek: eggs in it. It's devine and I'm making it later for my DH's birthday. The squidgy bit in the middle is heaven on a plate but I gain at least 4 lbs just thinking about it :D

  • Hi - a friend of mine who is new to baking has just asked whether she can replace the plain chocolate in a cake recipe with milk chocolate. I said I would suspect it could possibly affect the outcome because milk chocolate has more milk solids and fatty bits than plain, but I am not 100% sure.:undecided Not something I have attempted. Any thoughts please:question:

    Possibly depend what you do with the chocolate. Milk chocolate is harder to melt than plain chocolate without scalding it. You'd have to melt in in a bowl over a pan of boiling water with lots of stirring. I think it probably would affect the outcome but not so much that you wouldn't get away with it IYSWIM. I think the cake would probably come out less chocolatey, sweeter, and with a slightly less moist, chewier texture but that's educated guess-work rather than experience.

    She could add 2-3 tablespoons of cocoa (not cocoa drink) together with milk chocolate to substitute the dark chocolate. Although I find that high percent dark chocolate works much better for any cake :)

    Yep. Put a bit more cocoa in it than the recipe says, and don't try the microwave version! :D

    Ooh thanks MrB - just been reading the thread and the piccy of your cake looks scrumptious - did you manage to wait the two days in the end?:D How much extra cocoa would you suggest putting in?
