  • Evening all. Well, I've had a rubbishy week. I have minimal money (like a tenner to my name!) due to a benefits mix up, until next Thursday (when it's wages day) so I am definitely staying within budget :o Incidentally, next Thursday is when my February budget starts! We'll be ok though, we've got a well stocked freezer and pantry :)

    Anyway, will update sig and give my total next Wednesday. Have a good week everyone :beer:

    Butternut Risotto was really nice, can't remember who said they had it last week but thank you you inspired me to search the recipie and open the bag of risotto rice I bought last summer.

    Meal plan
    Tuesday - quorn and leek pie
    Wednesday - veggie lasagne
    Thursday - veggie shepherds pie
    Friday - out with friends for a meal so no cooking

    Wow, I've got an unopened bag of risotto rice in the cupboard ... I can see that appearing in my lunch menu coming up! Today's spends were £14.33 on things for the week and will probably be added to at the end of the week to cover the weekend, etc. I managed to stick to the list with the exception of a bag of self-raising flour, of which I'm getting very low and as I'm doing more baking it made sense to get it while I was there. Other than that, it was just the usual stuff.

    Tea tonight was a homemade sweet & sour (I thought it was the best one I've ever made) - big success. It's very similar to this http://www.food.com/recipe/extreme-low-fat-sweet-and-sour-skillet-chicken-78288 and I only tweaked the amounts of vinegar and soy sauce to taste.

    Well, I hope everyone is doing OK. I'm off for a sneaky lemonade and a sit down.

    I had pumpkin risotto last week was lovely!

  • Had a little spend yesterday as I popped into Waitrose when I was passing to see if they had any decent reductions.
    Spent £16.81 but got a piece of beef that was originally £16.04 for £5.17, as well as lamb mine, 2 packs of frying steak, 2 packs of gourmet burger kitchen aberdeen angus burgers, some delicious Gloucester old spot sausages, a pot of whipping cream and a bunch of carnations.

    Was thinking of using the frying steak for stir fry's but would welcome other ideas, as I don't usually buy it!

    Evening all :)

    Well, a successful day in a mixed way. DH cooked for him and DD, whilst I went to the SM this evening. I picked up dinner for myself ... consisting of one of those spit cooked hot chickens (half price - £2.49) and a reduced price flute (£0.25). The rest of the chicken has gone into the fridge to make sandwiches and finally stock.

    Got mince out of the freezer to make bolognaise for tomorrow night, but given it was nearly 9 when I got home, it hasn't happened, so suspect that it will be Wednesday's dinner, unless I get back early tomorrow night.

    Not sure what will happen about dinner tomorrow as I'm out from 6ish until 6ish, and DH will always defer to takeout unless I've pre-planned things. He does plenty of other things around the house, meal planning isn't his forte, however, he's more than happy to cook if pointed in the right direction.

    I may just ask him to make the bolognaise. (Done .... he and DD are going to do a batch cookoff ... 3 packs of 500g) :):)

    This is good as I managed to pickup 4 pints of organic full fat milk for 35p, which I intend to make up as batches of white / cheese sauce .... so I see a lasagne featuring in our mealplan sometime soon ;)

    Don't think I need to buy much else this week, apart from perhaps some milk and eggs.

    Oh and I have a massive bag of kale ... any suggestions on how to cook it ?!

    Stir-frys would be fine - or you can just fry it really quickly in a large pan and use in a sandwich or similar.


    Had another NSD here today so starting to count up now :)


    We had HM beef chilli today - I had a jacket and DH had new pots. Don't know how many portions but loads left and cooling atm. Will have to fridge and portion/freeze the morrow when cold :D


    Sorted chest freezer today so know exactly what is in there and need to do the up-right the morrow, moving some stuff over to make room for the chilli :rotfl:

    I usually steam it for between 8-12 minutes, depending on taste.

    It can also be microwaved (rinse, shake and place in a covered dish) but I find this makes it a bit tough.

    Some people add butter after cooking, to reduce the bitter taste.

    Good morning, I have managed to come in under budget each week so far but I fear this will not happen this week as I am going to Lidls for a 'look round', translated into spending my money on fridge stuff and treats. I haven't been to a Lidls in years but I have been offered a lift to the next town so want to take advantage.
