    Apple and mint chutney Microwave method (mines 800w)

    1lb (450g) cooking apples
    8oz (225g) onions
    1 good tablespn chopped mint
    6oz (150g) white sugar (or brown if you want a darker chutney.
    6 tablespns white vinegar
    1/4 teasp salt
    1/2 teasp pickling spices

    Place pickling spices in a jug with vinegar and heat for 2 minutes in microwave.
    Dice apples and onions and place in a large bowl suitable for microwave.
    Add to the bowl the sugar, salt, chopped mint and the strained vinegar, discarding spices.
    Heat for 5 minutes and stir well then cover and cook for 20 - 25 mins, stirring every five minutes.
    Spoon into hot jars.

    :omy blessings for today are:

    1) its friday and a bank holiday weekend
    2) its sunny and warm
    3) its pay day today :)
    4) am going away with o/h for a lovely weekend away which is free thanks to a lovely competition :)
    5) Knowing that while we are away my d/s will be having a lovely time with her godparents! Whoo hoo

    Bella - where does the mint flavour come from as I can't see any mint in the ingredients or am I being thick?

    sparrer - well done on your nsd's. I hope your chirp has come back, I must admit I loose mine if I stay around the house too much.

    Yesterday's pleasures:-

    1. A lovely 30 minute (free, wouldn't go if I had to pay) bus ride to Mr. A past green field and hedges heavy with May blossom.

    2. Mr. A turning up trumps and yielding enough YS goods to provide us with several meals.

    3. A Phillipa Gregory book in the charity shop for £2, the max I will let myself pay for a book.

    4. Just missing the rain.

    5. Doing the morning's chores in the afternoon, made a nice change.

    Todays pleasures
    1. Special price Muller Corner for breakfast :)
    2. Hanging TWO loads of washing on the line to dry
    3. Walking (4 mile round trip) to playgroup rather than taking the car as the weather is so sunny and i'm fed up with cars at the moment (DH was hit in our courtesy car (as mine is in being repaired after the last incident) by our 3rd uninsured person/party this year - grrr)
    4. Playgroup outside
    5. My DD being given her first proper bike for free by a kind neighbour of a friend.

  • Hi everyone

    Mine for the last two days.

    1. Great day touring the beautiful Wairarapa with OH.

    2. Took 3 fleeces to be carded ready for spinning.

    3. Planning all the beautiful things I will be able to make with my fleece.

    4. Stopping at a really nice restaurant for lunch with oh. went to a very posh one first, but after he scanned the menu and said " I suppose I could have the herrings in tomato sauce on toast" I decided we needed to go elsewhere, Found a lovely place with log fire and very friendly service.

    5. Coldest day of the year, blowing 100kph winds, so we lit the fire and cooked soup on the top. Lovely.

    6. OH rescued a car on the beach, happens nearly every weekend, when people from the city arrive and don't understand the sand and what it can do. Still Oh was happy to help someone.

    Sparrer - hope you'fe feeling chirpier now.
    Bellaquidsin - thanks for the recipe. Would have made it yesterday but Mr A didn't stock pickling spices, so will try somewhere else today and make it over the weekend.

    Mine for yesterday -
    1. Getting up early and cleaning the garage out.
    2. All housework done by lunchtime except for washing as it was raining again. (glad I waited as it is sunny this morning so will have it on the line soon).
    3. A neighbour's son had been given some free flour, sugar, butter and jam and asked if I could use it as his mum was away for the weekend. I was so excited as I never seem to get anything for nothing.
    4. Working out housekeeping money for the last month and realising that I have cut our food bill by £40 for the month, so will try again this month but will try to reduce by £50 this time.
    5. There was enough chicken on my M&S meal deal for tea on Thurs and last night too as well as giving mum and dad half and they managed to get tea on Thurs and Fri and a sandwich too from their half. It never ceases to amaze me now how much I can get off a chicken compared to the days when I only really used the breast meat for 1 meal and possibly a sandwich then threw the rest away. I am horrified that I used to do this until reading MSE. What an awful waste.

    My pleasures yesterday:-

    1. Housework all done and spic and span ready for visitors on Sunday.

    2. Baking apple pie, scones and bread and a yummy chocolate cake which is a great favourite with the visitorss I am having.

    3. Eating my 'free' salad leaves from the garden. Always a joy

    4. Tuna rissotto for tea with lots of veg. Nice and cheap and easy to do after all the baking.

    5. Receiving coupons through the post for £10 off a £30 shop at Mr. T. so guess where we'll be going today. It's not very local so we are making an outing of it and taking a picnic lunch of hm soup and hm bread rolls to eat in a nearby park - very OS:money:
