You can manage the add-ons online via your account although it's not immediately obvious how.
Go to Sky.com and log in to your account. Click on 'My Account', you should already be on the TV tab, scroll down to 'Your Package' and click on (say) HD. You'll get a full screen pop-up that describes the HD package, scroll down and you'll have two options, 'Add More Packs' & 'Remove This Pack'.
Don't forget that it's 30 days notice for add-ons so if you try it at the start of a 2 month offer you'll only get the first month. I presume it's pro-rata if you're paying anything for it so you'll get charged for a partial month.

Update, phoned sky and cancelled all 3 giving 31 Days notice.0 -
I had a flyer though the post today offering me Sky Sports Complete Pack in HD for £18 a month (On a 18 month contract)
I went on live chat and said about the flyer (They didn't want proof!) and I got this deal0 -

Has anyone renewed their Sky Talk & (ADSL) Essential Broadband contract recently?
I'm coming towards the last few weeks of my contract and was wondering what the current retention deals were? Last year, I found that the Call Centre team barely budged, whilst Online Chat were much more willing to offer a good deal.

Just got my basic entertainment package down from £46 to £39 and switched to sky fibre at the same time, so:
Entertainment TV package
Sky fibre broadband
Phone line rental
All for £39 / month.
Would like sky Q but operator was adamant that it would be £199 for the Sky Q box.

have been on free line rental and 5 pound broadband for 4 years but this year they didn't budge despite multiple calls and online chat
Decided to change to Fibre with the current vodafone deal which is really good value for money, activated today and happy with it
There are Sky Agents who you find in shopping centers who did offer me Sky Q ent for £15 and Sky fibre max for £23 which I think was competitive, but would involve being a new customer"It is prudent when shopping for something important, not to limit yourself to Pound land/Estate Agents"
