Barbeque ideas please!

  • The last few bbq's we have held I have bought wraps and cut them in half. Perfect for either sausages or burgers and ideal for those of us watching their weight or wanting a less stodgey option. Has gone down really well and any left over can be used for other things and frozen easily.

    Just spent an hour and a half queuing at the bakery at Asda as it didn't seem to have occurred to their manager that there might be a few extra BBQs on this weekend. Never mind, I should have been smarter and ordered them earlier in the week like the clever so-and-so's who just turned up and got their stuff.

    Got 120 burger buns, 24 hot dog buns (all there was!) and 6 French sticks which I thought would be ok to cut up for adult hot dogs/other stuff.

    And the sun is coming out :j:j:j

    I've been Money Tipped!
    It's finally looking like we might have a decent barbecue afternoon so I'm going to get in touch with my inner pyromaniac/cave woman and grill some meat later. I'm wondering what people like to eat at barbecues other than the traditional charred meats? I'm going to do some garden salad, some potatoes (either jacket potatoes or wedges) some couscous. What else would you suggest?

    I feel like I'll have way more meat than other 'stuff' which is a bit off-balance, but I can't really think of what else to do.
    Common sense?...There's nothing common about sense!

    The last couple of BBQs I've done have had

    - HM burgers
    - sausages
    - pulled pork
    - BBQ-y chicken

    Then for non-meat
    - salad (very little of it gets eaten so don't go overboard)
    - spicy rice (this recipe is always a hit - http://americanfood.about.com/od/riceandgrains/r/Spanish_Rice.htm)
    - potato salad (and sometimes I'll keep some plain new potatoes aside)
    - chips (usually just oven chips)
    - coleslaw
    - baps for burgers, and hot dog buns for sausages.

    Think that's about it. I try to do things that'll keep, if we have leftovers, but have spare incase people want more. So for the rice, I cook it in the morning and cool it quickly by spreading on a baking tray. Then portion into bowls/takeaway tubs, which I can heat up one at a time depending on the quantity we get through at dinner, only takes 2 mins to heat up another bowl if people want more. We do a large amount of potato salad, and eat the leftovers ourselves for dinner for the next day or two. Salad, I only make a small amount as it's not usually people's go-to choice (not in our group of friends anyway), but people have a little so it's nice to have the option.
    I'll make a batch of HM burgers fresh, and freeze any leftovers, or I use frozen ones I've made prior to the BBQ and if people want a second I just sling them on the "BBQ" (we use a George Foreman BBQ) from frozen. Sausages are usually just frozen ones already, or I might grab a pack of fresh ones the day before and again I'll freeze the excess.

    THe last BBQ I had was a small round one on 3 legs. MY son lent it to his friend and it was returned fit for the bin.
    Now I cook in the kitchen and we sometimes eat on the patio.

    My suggestions though....
    corn on the cob on BBQ
    BBQ onions in a disposable tin tray. Like a pie tray.
    Banana's, make a slit and push chocolate buttons in. Pop on the fire to melt. Serve with ice cream.
    Vegetable kebabs.
    The secret to success is making very small, yet constant changes.:)

    Thanks krlyr, I hadn't thought about rice.

    I cook everything from scratch here because I'm really fussy about food and won't eat things if I don't know how it has been prepared. If there are leftovers it'll all go in the fridge or freezer and get eaten - we don't do food waste! For meat I'm doing turkey burgers (cheaper and healthier than beef and people love them), chicken yakitori skewers, sausages, pork loin steaks (which I've brined over night to add flavour and stop them drying out), and some ribs.

    We're quite keen on salad/veg so I'll do quite a big bowl and some home made vinaigrette. I don't like it myself but I'm thinking about getting some coleslaw for the others.

    Do you ever do corn cobs on the bbq? I have a bag of frozen ones that I'm thinking about boiling and then finishing on the grill.

    I've been googling and have seen a few people recommend grilled asparagus which I'm tempted to try (if it isn't too extortionate at the shop).

    BARBEQUE SAUCE

    Makes approx. 120ml

    INGREDIENTS

    2 tablespoons of butter
    1 tablespoon of sugar
    2 tablespoons of brown sauce
    2 drops of Tabasco chilli pepper sauce
    3 tablespoons of tomato ketchup
    1 tablespoon of Worcestershire sauce

    METHOD

    Put the butter and sugar into a saucepan on a low heat. Melt the butter and sugar. Stir frequently to stop it sticking.

    Remove the pan from the heat.

    Add all of the other ingredients. Mix thoroughly.

    TIPS

    This will keep in the fridge for 48 hours.
    If you fold it in half, will an Audi A4 fit in a Citroen C5? :)

    THREE BEAN SALAD

    Makes a large bowl

    INGREDIENTS

    400g tin of borlotti/rose coco beans
    400g tin of cannellini/white kidney beans
    400g tin of red kidney beans
    2 tablespoons of extra virgin olive oil
    1 tablespoon of lemon juice
    1 tablespoon of dried parsley

    METHOD

    Open the tins of beans. Put the beans into a sieve or colander and rinse them thoroughly under running cold water.

    Put the beans into a bowl. Add the lemon juice, olive oil and parsley. Mix thoroughly.

    Cover and put in the fridge for at least half an hour.

    ADDITIONS & ALTERNATIVES

    Add a clove of garlic. Peel the garlic and chop it into tiny pieces.

    Add 2 spring onions. Wash the spring onions, cut off the root ends and leaves, peel off and discard any dried up or slimy outer leaves, then chop them into thin rings.

    Try to use three different looking beans.

    Use other beans, including sliced green beans or broad beans. You can use baked beans, but wash the tomato sauce off.

    You can use black-eyed peas, which are really black-eyed beans, and chickpeas, which are also known as garbanzo beans.
    If you fold it in half, will an Audi A4 fit in a Citroen C5? :)
