Can't help you much in the meat/fish area due to being vegetarian. OH isn't and neither are a lot of friends, so I tend to make marinades and bung chicken or whatever in, back into fridge and OH cooks it.
Marinades I make up, depending on what I have -
Yoghourt/fromage frais, spices, lemon juice, sometimes some tomato puree - spices could be as in tandoori - I just make it up as I go along.
Or an olive oil and lemon or lime marinade with herbs - again I make it up depending on what I have - lots of choice just now as herbs are growing well in the garden, rosemary, thyme, oregano, lemon balm, lemon sage, sage, curry plant etc - no one is allowed to touch my basil except me - my absolute dream herb! Fresh herbs are good in marinade, but if not available, dried is fine.
Another is with soya sauce, ginger, garlic & pinch of chinese type 5 star spice. Think I bung in a wee touch of olive oil there too. Just to save meat from sticking to the barbecue!
Basic veggie recipes.
Boiled or steamed new potatoes and corn on the cob. Bung on barbecue. Everyone seems to do them in tinfoil, not my choice, I like the crispy bits! Load of butter or herbed butter to serve.......yummm!
Big mushrooms - not necessarily those Portobello mushrooms......but they are ideal.
Wipe mushrooms. remove stalk. (If you are doing a load, save stalks and use later for a sauce of some sort, or a soup)
Fresh basil - 2 or 3 inside each mushroom. Then add some cheese, grated cheddar is good, so is halloumi, Edam, Gouda, Blue cheese - even those plastic cheese slices. Then half of a cherry tomato, or some little slices of a tomato. Wee drizzle or spray of oil (I just prefer olive). Few mins on the barbecue........heaven!
Stuffed peppers are good too. Cut pepper in half, stuff with filling....better done in tinfoil probably. Filling could be anything - left over mushrooms stalks, rice, tomato. Top with some grated cheese.
Stuffed courgettes are really good - scoop out inside and use for filling all your other things as well as the mushroom stalks! Either just saute up the insides or make up tomato sauce using can of tomatoes, tomato puree and some herbs such as oregano or basil.
Hope this is of some use anyway.0 -
I have posted this one before, but it is superb so will post again:
Get a cheap cut of lamb, e.g. shoulder, and cut the bone out, butterfly the lamb so it was pretty flat and about an inch and a half ish thick.
Cover in olive oil, salt and pepper and chopped garlic and rosemary, and then sling on the barbecue and cook until pink (or however you prefer - pink took about 15-20 mins on a medium heat - nearing the end of the barby - turning once)
Let it rest and then slice it and put in pittas that have been warmed on the barbecue, and added a bit of salad.
I hashed this together for the first time a couple of months ago, and it went down a storm, I've also passed the recipe on to friends who have said how great it was, so worth a try! You could also make it a bit moroccan by adding cruched cumin and coriander seeds, and take out the rosemary.
Home made burgers are always a good bet and seem to impress people, also as people have mentioned before, fish in a foil parcel. I made one the other day which was cooked in the oven (but you could easily do on a barbecue) that was a fillet of sea bass, and then on top a small knob of butter, some chopped fresh herbs (I used parsley and thyme), some chopped garlic, a thin slice of onion and a slice of lemon). fold the foil over at the top to make a sealed parcel (then the fish steams in it's own juices) and cook on the barbecue. I reckon they would take about 15 minutes or so.
Also, how about prawn kebabs? Just get some fresh raw tiger prawns (peeled or whole), load onto scewers (if using bamboo ones, make sure you soak them in cold water to stop them burning) and brush over olive oil and crushed garlic. Delicious!
Best of luck.0 -
What about chicken tikka? I mix some Tikka spice mix with natural yogurt and marinade cubed chicken in this overnight. Thread onto skewers and barbeque. Serve with nans and salad and lemon wedges to squeeze over. A sauce made from yogurt and chopped corriander is nice with this too.
This is currently the house hold fav with the kids and adults too.:D0 -
Baked potatoes always go down well, are easy and cheap too. Just wrap in foil and place on the BBQ (can be started in the oven first if short of time).
I usually also do a big bowl of pasta, one of salad, and garlic bread as they can stretch the meat 'mains' further and are filling and cheap. Its nice to be important but more important to be nice!0 -
Halloumi is wonderful BBQed.
I personally am a massive fan of the Calor gas barbequiing recipe pages. I can sit and drool over them all day. Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.
Theres no dollar sign on piece of mind
This Ive come to know...
So if you agree have a drink with me, raise your glasses for a toast :beer:0 -
Lamb chops coated with english mustard and then brown sugar. (My kids love them and you can't taste the mustard when it has been cooked).
Veggie Kebabs with peppers, halloumi and courgettes
Chicken Satay and a noodle salad on the side
Bananas opened carefully chocolate put inside wrapped up in tinfoil and baked on the barbie.
Swordfish marinaded in olive oil and lemon juice
My parents do whole king prawns on the Barbie with garlic mayo and crusty bread (not cheap which is why we don't do them ourselves!)
A chocolate fondue with lots of fruit at the end can be nice
