Barbeque ideas please!

    Hi FunkyFairy,

    Salmon is delicious on the barbeque. If they're salmon fillets just cook skin side down with a slice of lemon on top.....no need to turn them. If they're salmon steaks, make sure the grill is well oiled so that they don't stick and turn half way through cooking. Either way they should only take a few minutes on a hot barbeque, take care not to overcook it.

    I don't use tinfoil, but I expect that you could. I think things done in tinfoil on the barbeque don't really get the full barbeque flavour...but that's just my opinion.

    stuff with herbs of choice cover add lemon wrap in damp newspaper, tastes better that foil, don't know why, but it does.
  • As a part of keeping in touch with the family we do a 3 way turn and turn about at weekend meets with the Ex, son and family and myself. However the food is now starting to get predictable and, obviously, with the current weather it is mostly (OK always) a BBQ. So does anyone have any ideas for freshening up a BBQ and avoiding the usual Burgers, Bangers Steaks and so on. We tried Corn on the Cob last week and it wasn't too bad and have been suggested Pineapple. Any other ideas please??????

    we make a lovely mango relish that really gos down well wherever we go...

    1 mango cut
    1-2 chillis cut finely
    1 red onion
    corindar leaves cut up
    olive oil

    Just cut and mix all together....everyone seems to love it.

    We love bananas with passionfruit on the bbq too...
    one banana..half passionfruit...couple teaspoons of orange juice..put all in tinfoil and cook on the bbq for 10-15 min and serve with a dollop of cream :) mmmm

    or peaches and marshmallows...we cut the stone out and put marshmallows in its place and then wrap in tin foil..put on the bbq for 10-15 min

    or pineapple ...cut pineapple into quarters or eigths....score pineapple (after removing core) and rub melted butter in and add brown sugar on top....mmm bbq it tastes lovely (you can also added grated coconut to the top and malibu)

    How about kebabs...with vegetables etc on

    lamb kebabs are great with minted yogurt :)

    sorry only a few ideas right now..just about to pop to bed.

    Hi Mr P, how about kebabs? They're colourful and tasty too.

    Quarter some onions and peppers (red or green) and dice the meat. Alternate meat, pepper, onion and button mushroom on metal skewers. You can also use wooden skewers but these have to be soaked overnight before use.

    If you like fish, this works well on the BBQ too. Delicate fish like salmon or trout can be wrapped in foil with a slice of lemon and a dash of olive oil, then BBQd. Sardines from the fishmonger can go on straight. NB they are very strong tasting this way and not to everyone's taste.

    If you have side dishes and dips, pitta bread 'toasted' on the BBQ and cut into strips is lovely.

  • I already do Pitta Soldiers, the youngsters love them, but as far as kebabs go I tend to do them all meat and then add to the pittas. The reason for this is that when I lived in Cyprus (3 Years BTW) the veg used to burn before the meat cooked and it has sort of stuck with us. Now especially with chicken I pre cook it and finish it on the barbie, we used to adore swordfish steaks with lemon juice on but now feel that it isn't very friendly so avoid them. I was just wondering whether anyone had any "out of the box" ideas??

    trout warpped in tin foil stuffed with lemmon butter and cooked 15 mins on each side.
    If it doesnt pay rent sell it.

    heres a new idea for bbq's -

    DON'T DO IT!!

    I'm sick of smelling lighter fuel and burnt sausages wafting from all directions as soon as theres a bit of sun.

    gets me why people spend 10's of thousands on their dream kitchen then do there cooking outside.
