    .. anybody got quantities/cooking instructions for homemade bugers?
    We make our burgers from just minced beef/lamb/pork.

    To make a very basic burger, take 1lb (approx 450g) minced beef, divide it into 4, roll into balls, then flatten into rounds. Chill before cooking on a hot grill. This makes four basic, very meaty 1/4 pounders.

    You can add a handful of breadcrumbs, or fine oatmeat, to the meat before dividing/shaping to eke out the meat content. If the mixture is too 'dry' add an egg to bind.

    Flavourings depend on what tickles your fancy.

    ~ add some mint to minced lamb to make lamb and mince burgers.
    ~ a spoonful of apple sauce (or finely diced/grated fresh apple) to pork to make pork and apple burgers.
    ~ with minced beef, you could add a spoonful of horseradish sauce.
    ~ add some finely chopped bacon to the basic burger adds a lovely flavour; I sometimes do that with minced beef.

    Rosemary goes particularly well with lamb or beef, sage goes well with pork. As for other flavourings, such as chilli flakes, you should begin by only adding a pinch/teaspoon at a time until you find the right balance for your tastes.

    If adding a slice of cheese when the burgers are cooked, the flavour can be varied simply by changing the cheese. A slice of cheddar (thinly sliced) plus a pineapple ring = Hawaiian burger :D (My d11yo son makes these :drool: )

    Cooking times depend on the thickness of your burger (my dh liked really thick burgers, so his would take longer). Put simply, they are cooked when the juices run clear!

    You seem to be a newbie to preparing your own food for bbq'ing, so the advice I would give to you is this: keep things simple, try not to take on too many new and different recipes (better to perfect one or two good recipes than trying to handle several new ones at once).

  • Hi - I noticed when I was doing my online Tesco shop that they had a 50 piece BBQ pack for £9.99. Couldn't see exactly what was in it, but have ordered it anyway. Having a BBQ over the bank holiday weekend. Have bought BOGOF drumstick packs from Morrisons. Will make a simple marinade for those (slashing chicken lets the marinade in and speeds up cooking time). Have got a large pack of own brand frozen beef burgers which I will leave out to defrost on the day. BOGOF packages of fresh sausages, also waiting in the freezer (with buns and finger rolls) which will be defrosted. Will also get some sausage rolls and a couple of quiches for anyone who's starving when they get there. I'll probably cook a few bits just before the guests arrive and keep that waiting in a warm oven with jacket potatoes, again in case anyone is wasting away. Sometimes when I have a BBQ I make my own coleslaw and potato salad, sometimes I go and buy the big tubs from Costso. Also do a green salad. And all disposable tableware and glasses so I don't have to wash up! I'm a big BBQ fan and have used mine practically every weekend now for the last month, including Sunday Roast, and will use it midweek too as the weather picks up. I make a lot more effort, like making burgers and kebabs, when I'm cooking for just me and my OH or a few friends. However, when it's a crowd I just go for the multipacks because it is easier and cheaper. And because most people are there for the booze anyway!

    Hi all,
    All this talk of BBQs is making me hungry! I would like to make some potato salad with some Jersey Royals i have. What do people use for the sauce? (i am allergic to eggs so no mayo, i usually put salad cream in but OH hates it) I am thinking either creme fraiche or natural yoghurt with some fresh chives. Has anyone tried either of these?
    we have love enough to light the streets.

    OH bought some reduced butchers ribs in BBQ sauce...well 5 packs..LOL..reduced to 75p and they are delish.

    Have been invited to a BBQ on the Bank holiday monday-just SIL's and have offered to make HM Potato salad, chicken carbonara and HM coleslaw:D

    They are providing all the meat and breads etc, but may take some of the higher meat sausages and burgers around too as the highly processed ones dont settle well in my tummy:o

    Theres others taking buffet food and shes doing jacket spuds and some chilli too.

    Lets hope the weather holds out;)

    Peel some bananas and cut into chunks roughly the width of a rasher of bacon. Wrap the banana in the bacon and secure with a cocktail stick & bbq. Absolutely delicious!

    Another favourite is toulouse sausages, sliced down the middle and spread with english mustard, put about 3 prunes per sausage in the slit, wrap the sausage in parma ham or other and bbq! Sounds odd but always goes down well.

    Also what do you think Vodka and innocent smoothies would taste like? It saves me blending my own smoothie to make vodka fruit smoothies...oh and how would vodka fruit smoothies taste...apparently there good, im making them for the girlie wirlies

    We sometimes do Parmesan Jacket potatoes for bar b q's.

    Cook jacket pots as normal. When done cut them in half, put a dollop of butter on each half (we like a lot) cutting it in the pot a bit iykwim. Then sprinkle on some salt & pepper, mixed herbs and a load of parmesan cheese then place under grill for a couple of mins - they are quite delish.
