It's another miserable day, very cloudy but still quite warm. Think it's going to be a warm and humid one.

    Having an EE day today:

B - bacon, scrambled eggs, beans, mushrooms
L - smoked salmon & cucumber sandwich, mayo instead of spread 2 syns
    D - spanish rice - 3.5 syns for chorizo & white wine

HEA - milk in tea throughout the say
    HEB - bread
    Syns - mayo 2; 12.5g chorizo 1.5; 50ml wine 2 = 5.5

Have got cherries, grapes, strawberries, raspberries & melon to snack on if needed.

I'm really struggling to use all the syns I've got left (just not used to having this many midweek!)

Same here denise, muggy but no sign of the sun. May I ask about chorizo? I love it when it's in restaurant meals but haven't cooked with it myself. Do you buy a big piece and freeze or a small amount from the deli each time? Is the Spanish rice a SW recipe? We enjoy jambalaya so I'd like to give that a try. Apologies for barrage of questions but I would like to make our menus a bit more varied.

I've got lentil soup in the SC and might have a bowl this evening if I'm hungry. I've just used lentils, leeks, onions and carrots so it can be EESP if I need it. I'll slice the remaining gammon for the freezer and any scraps can go in with the soup too. This joint's really hard to cut neatly. Any ideas why?

Out for lunch today. Probably completely off plan so I'll keep quiet about that;).

Well done to all the people who have lost weight It's lovely reading about your journeys, I find it spurs me on.

I'm hoping to make a good effort this week and managed to buy some muller light corners this morning, but I'm not sure on the syns. I think they are 2.5 each? But it would be good if someone can confirm this please.

I had scrambled egg with tomatoes for breakfast.
For lunch I'm thinking of a jacket potato and beans (do I add speed foods?)
For dinner I've planned to have salmon, SF chips, and roasted veg

I don't understand how salmon is allowed if it's a fatty meat?
How many chips should I have? I think in the slimming world magazine photos, they show a small handful
    Kindness costs nothing :)

Second week of fast forward and for whatever reason, my weight is at a standstill. Last week was so good with 2lb off and although weigh in isn't till tomorrow, it's not looking very good! I think I'm going to be lucky if I have 1/2lb off:( I would have rather been on normal plan to lose that, than put up with the restrictions of fast forward! Oh well, holiday is soon and although I'm not going to get to target as hoped, at least I can look forward to that:D

It's not a SW recipe but something I've just made SW friendly. Can't remember where I got the recipe from but I found it a website about 3 or 4 years ago and use it regualrly when I've roasted a chicken at the weekend as it only uses a small amount of met. I use 25g of chorizo between the 2 of us but yu can use more if you want more of the paprika flavour (I just add some smoked paprika from a jar to give the extra flavour & to save syns:D). It's basically a risotto recipe.

I chop the chorizo into small pieces and put in a pan on a low heat to release the oils, then soften the chopped onions (red ones are nice for a change and a bit of extra colour). Once softened add Arborio rice and coat in the oil & onion juices. Then start ladling the hot stock in. Once the stock has all been absorbed and the rice is almost cooked stir in a handful or two of frozen peas and leftover cooked chicken to heat through.

You can make it more SW friendly by adding extra veg with the onion like pepper, leek etc if you want to.

To answer your question about the chorizo I buy a big piece and then cut up into 25g pieces and wrap in greaseproof and then into a ziplock bag and freeze. Just need to take out to defrost before using.

I've got lentil soup in the SC and might have a bowl this evening if I'm hungry. I've just used lentils, leeks, onions and carrots so it can be EESP if I need it. I tend to make my soups without meat so that they can be EESP if necessary. I'll slice the remaining gammon for the freezer and any scraps can go in with the soup too. This joint's really hard to cut neatly. Any ideas why? Could it be a bit overcooked as it tends to get a bit "stringy" when you try to cut it when it is.

    Enjoy your lunch.

Sorry for the length of that post but quite a few bits to answer, LOL!

For lunch I'm thinking of a jacket potato and beans (do I add speed foods?) I always think it's a bit awkward having salad or something with baked beans so usually have a small salad as a "starter" rather than with the jacket if that makes sense.

Although salmon is an oily fish it is good oils and also very good protein. You can have as many chips as you want as long as they are baked with frylight or done in an Actifry or similar. You also need to make sure that you have your 1/3 Speed foods which helps you decide how many chips to have. If you have loads of chips you need to have just as much roasted veg. As long as you only eat until you feel full and not just because they're there you'll be fine.
