    Morning All :)

Just whizzed up some home made Almond Milk (very easy, it only took 10 mins) and will be having it with some granola this morning before i go to work.

    All you do is:

-Soak 1 mug of almonds overnight
-In the morning, drain the water,, and add the almonds to a blender, with 3 mugs of water (use the same mug)
-Blend for 1-2 mins until smooth and frothy
-Pour through some muslin cloth (for making jam) and squeeze out the milk :)
-Store in an airtight bottle/container for up to 5 days in the fridge.

You'll be left with the almond pulp, which can be used as Almond Meal or flour, in recipes. Just spread out on a baking tray and put in the oven at a low temp for an hour, to dry out. Then you can freeze.

Lunch will be pancakes. I am going to try out the sweet potato pancakes. Not convinced they'll taste any good, but we'll see! Not sure what to top them with. I was thinking of making the coconut cream, using this recipe http://ohsheglows.com/2012/08/30/coconut-whipped-cream-a-step-by-step-photo-tutorial/

That sounds like a plan for tomorrows breakfast sorted then thanks Slinky :)
We are having spag bol tonight too, with wholewheat spaghhetti. How do you do the cauli rice? And (silly question) does it taste stongly of cauli?

Cauli rice is really easy if you've got a blender and a microwave. Cut your cauli florets to about the size of a large walnut then put them a few at a time in a blender in blitz for a few seconds until they resemble rice grains. Don't try doing too many at once. We do about a pint pudding bowl for 2 people which you microwave on full for about 6 minutes. No water required if you've washed the cauli just before chopping it. A knob of butter on the top and away you go.

No it doesn't taste strongly of cauliflower, and is actually bland enough to use in place of rice, pasta and mashed potatoes if you're following a low carb plan.

I guess you could cook it on the hob first and blitz once it's cooked. I would suggest leaving it quite firm if you're doing it that way. Somebody I know eats chopped cauliflower raw and says it's OK, but that's a step too far for me!

Thanks for the simple explanation. I have now switched to wholewheat pasta and rice and whilst I don't want to low carb as such I am trying to reduce the amount I am eating and therefore I will be giving this a go.

I found that with low carb, high fat I don't have to reduce the amount I eat, I lost weight and never feel hungry. I lost over a stone last year and so did my OH, I'm at a weight I passed through in my teens and hadn't been for over 30 years.

I do eat carbs and sugary things as an occasional treat, but 80% of the time we eat low carb and feel much better for it. Once we found substitutes for cereals, bread, pasta, rice and potatoes, the weight fell off.

Personally I bought a 237ml bottle of NOW better stevia glycerite and it's lasted me over a year.

I was on the candida diet a long while, very unhealthy and counter productive as a long term diet.

My Mum started using the stevia in her tea replacing sugar and lost weight [she drinks a lot of tea].

Cutting out fruit imo is a step to far I think they are fine in moderation like everything else.

Cavalier do some stevia chocolate which is gorgeous but expensive.

Also thorntons diebetic milk choc bar is very nice but has artificial sweeteners that cause laxative effects so I generally avoid it. As a rare pick me up not so bad in MODERATION. That's the key. :)

For breakfast I have doves farm cornflakes and sweeten the milk with drops of stevia.

Morning All :) I did a big food shop online yesterday, plus picked up some bits at Aldi, so the cupboards are full.

Today i am going to use my Tesco clubcard vouchers to get some flaxseed

    and quinoa
    http://www.tesco.com/groceries/product/details/?id=256517423

as well as some brown rice if i have enough left over.

I have £11.50 in vouchers, and those come to £8.65. So i might see what else i can pick up.

I am also going to make up some brown rice and quinoa to store in the fridge for quick lunches. I am wondering if i can bake some sweet potato and keep that in the fridge too...but not sure if it would taste right?

Just been away for a few days, good to catch up with posts. Found it quite tough - take away pizza is not friendly on any eating plan!
Just on substitutes, I have heard using shredded courgettes or leeks are acceptable with bolognaise, although not tried them.

    Have a good weekend everyone.

I am SO SO glad i did this this morning! I arrived home about 20 mins ago, after an afternoon at my friends house, and was starving.
So put some of the quinoa and sweet potato in a pan, added some spinach and 3 cherry tomatoes chopped), then added some tumeric, curry powder and a splash of water. Heated through, until the Spinach had wilted, and then put in a bowl and garnished with some coriander leaves (from my plant on the window sill) and a squeeze of lemon juice.
It was REALLY yummy! Just perfect, and has filled me up nicely!
