I love butternut squash soup too! I chip it in half, make cuts into it, and rub some oil and salt in, then roast it in the oven until it is soft and the top is just bubbling/darkening. Then scoop it all out into chicken stock, usually with carrots or sweet potatoes
So good!

The good news is my butternut squash soup was rather good :j - I made it very spicy by chucking in two birds eye chillies as well as roasting the squash in the oven with cumin seeds, olive oil and chilli powder. Fried some garlic, red onion and grated some fresh ginger that was kicking about in the fridge into it too and used veg stock.
DH nearly choked on the first spoonful because he wasn't expecting it to be so spicy, so maybe I'll only put one chilli in it next time. :rotfl: I had to buy some creme fraiche to tone it down a bit.
Bad news is I got home from work the other day and found a big screw stuck right in the side of my car's tyre. :mad: No saving the tyre so DH put my spare on for me and have to get a new tyre.So more money I need to pay out.
Did a bit more yoga today but had a little change by using Y0utube instead of my usual DVD. Had to try a few before I found a lady I liked.Will probably try more of her videos next time.

Thanks for the tyre sympathy DFOD & Lilt. Bit of a bummer but getting the tyre replaced for just under £60 so could have been worse.
I think I'll experiment with making more soup since this one actually went well.

Am knackered today as went for lunch and wine after work yesterday...then had to get up at 5am for the sixth day in a row. :eek: I had a good (and cheap!) time though. One more shift then 5 days off. :j Working an overtime shift in the middle as we need a bit extra for debt/holiday.
It's a nice sunny day so have stuck the washing out on the line and hopefully it will dry. Thanks Lilt, pity I'm knackered and forcing myself to work an O/T shift on Sunday but still 2 days off, 1 in and another 2 off.
Got my tyre changed today, guy was nice and quick so that was good. Also sorted out my new car insurance - got it for just under £20 p/m plus £50 cashback from Quidco. :j My renewal quote was £40 p/m :eek: Need to remember to cancel the old car insurance, still got a couple of weeks though.
Did a huuuge pile of ironing last night and have sorted out all the washing. Going to make some carrot and lentil soup tomorrow so will see how that goes.
Will try and have an early night tomorrow as up at 5am on Sunday for my overtime shift. DH having a poker night with his friends so might need some earplugs. :cool:

I made carrot and lentil soup last night and it is the best I've ever had. I added a splash of cumin, some hot chilli powder, tiny bit of ground coriander, garlic puree and a splurge of tomato puree to chopped carrots and washed red lentils with chicken stock. Salt & pepper to taste. Was very impressed. and as Him said 'it tastes all the way down' :rotfl:
I sometimes have to catch up a weeks worth of YNAb and it can be really daunting. Eventually once I get settled with it and a cuppa I am fine, and once it is all right I feel much better!

O/T shift was fine once I got out of bed - hate getting up at 5am as really not a morning person but it's an extra £100 to the holiday/debt.

Impressed myself so will need to keep this soup making malarkey up. :rotfl: Yours sounds like a good variation, will need to try with chicken stock.
Have done a bit of YNAB work but still need to do a bit more on payday. Have had a couple of lazy days so feeling a bit less stressed but still worrying about the different debts we are juggling. It feels wrong to be spending on the 0% card for the holiday even though that's the reason we got it.:o
Managed to tidy the spare bedroom that still has some boxes waiting to be unpacked (since May last year.. :whistle: ) and found some homes for things or threw them out. Still have two boxes to go through but it's still looking a lot better. Also went through my clothes and have a big bag to take to the charity bins.
Mother's Day cards are purchased and DH just needs to write and send his with the gift card we bought as well. I'm still thinking of something small to get for my mum though.
