Thank you for the reminder! I bought some, which Mr A replaced with trimmed ones to substitute and they grow so quickly in the fridge! Really need to make that soup!

Well, we've had a bimbling type-day today. Not super-lots achieved, but one or two things done, at a gentle pace, and the day enjoyed
We were going to start a job to renew the ceiling in the shed, but it got too late to start, so that has become our 'must do that above all else tomorrow' task now which is probably a better way to do it. It could take 5 minutes, or 5 hours - we'll see.
We didn't have lunch until we'd returned from the shops and the recycling centre, so I didn't make the kidney bean curry to accompany the aubergine curry for dinner. I did, however, make another batch of yoghurt (used UHT again), so I was equally pleased with thatgreenbee I have printed off the recipe, and will definitely look forward to giving it a bash - must remember to get some curry leaves though, as I have run out
Dinner was Cambodian Aubergine Curry with lentil dhal and rice. Although this curry could be quite complicated - you have to make the curry paste for it first - once you have the paste (you make plenty, and it freezes just fine), it really is quite a simple curry. And the taste..... oh my goodness, the taste...... I have no idea what authentic cuisine tastes like in countries like Cambodia, Vietnam, or Thailand, I've never visited. I have never been to an 'authentic' restaurant in this country either. However, you eat this curry, which is so fragrant, and has so many layers of flavour, that you feel like you're eating a five star meal - I kid you not. I didn't have any fancy green veg (forgot to get green beans from FF or 1celand), so I improvised with cauli (frozen) and peas (frozen). Apart from the cauli taking on a slight grey tinge from the aubergine
the substitution worked well

We munched it whilst watching the 2 part series that had been on BBC4 about the Inca empire. Very interesting, and lovely scenery and sights. I really learnt a lot from the documentary, as the presenter was intent on producing a good programme - not pouting and preening to camera at every opportunity :j Hurrah for British Museum boffins:j
Today I am grateful for these 3 things;
a lie-in with no guilt
finding bargain vegetables - good for the purse and the diet
for interesting documentaries, presented by folk who really know their stuff, and just want to tell the world about their subject

I made my curry without the curry leaves this time GP as although I moved 16 months ago, I still don't have a functioning kitchen and have no clue where the curry leaves are... it tasted fine.
I'm still trying to find the curry recipe that had a whole cinnamon stick in it, as I bought loads of them so I could make it more often and now can't find the recipe.
However, I do appear to have everything in for the Aubergine curry, which is great, because I have aubergines and was considering doing some research to come up with a new recipe to make with them
Glad the yogurt is working well. I need to remember to make a new batch in the next day or so.0 -

Wow greying that Vietnamese curry looks delicious. Can I come round?! You've reminded me that I need to attend to my shed roof soon. It needs new flashing tacked on along the apex of the roof and has a bit of a lean to the left. I shall brace myself (and it!) When it's a bit warmer.
Friday at school saw me go from the wonderful heights of Monday to a rather strident parent complaint about my teaching and character. It was all extremely.upsetting and knocked me off balance. However, my managers hAve again proven to be incredibly supportive and totally different to the last school. Am absolutely dreading tomorrow when it will be sorted in some way. The parent might be the type who does not let things go and has already threatened consequences. I am coping with the fear with positive thoughts and prayer.
Strangely yesterday, I discovered from a friend at my previous school that they realised while covering my work before the new person arrived that I did indeed work hard, therefore they've replaced one me with three new people!With family, friends and pets (or any combination of them) life will be fine!

Lots of lovely food being produced in Greying Towers and the virtual environs, OH is, as I write, tucking into the last portion of the huge vat of cannellini bean, red lentil and roasted tomato (YS) soup. My normally delicate digestive system is being even more temperamental than usual thanks to the vast quantities of iron that I am having to take, but I did eat and enjoy at the time:)
Alas, my yogurt making did not fare so well, I will not be setting up a little artisan business:rotfl:. Firstly it did not "work" after the first overnight setting aside, renewed the boiling water in the easy peasy yo flask thingey and left another night, better luck this time, then realised that I had omitted the skimmed milk powder and it was too thin for my preference so I resorted to straining through coffee filters. First one split:eek: much mess and waste, better luck with the next two lots and achieved about 12oz of rather good yogurt:j Tomorrow I will buy more UHT milk and try again.

My normally delicate digestive system is being even more temperamental than usual thanks to the vast quantities of iron that I am having to take, but I did eat and enjoy at the time:)
As a veteran of vast quantities of iron (for my first two rounds they had to keep checking my weight to make sure they didn't tip over into toxicity) I have a couple of tips:
1. take vit C with it (they've probably already told you this)
2. make sure they are investigating the cause of low levels. I'm 4 years into treatment for iron-deficiency anaemia and finally look like I'm getting stable iron stores.
3. High fibre diet - I added a spoonful of freshly ground linseed to everything I ate (iron makes your appetite disappear anyway, and all food taste the same, so who cares...); a bowl of SW 'dyno rod soup' every day :cool:; and some great fibre supplements called Coloclear extra. Avoid coffee, drink fennel tea. Add wheat and oat bran to porridge.
I find now that I know when my iron levels are getting better or worse by how the symptoms (restless legs, breathing, tinnitus, sore mouth etc) are affecting me. Tinnitus and restless legs tend to arrive first, then tiredness and insomnia, then the rest.
Oh - and both red wine and dark chocolate are high in iron. My GP recommended regular doses of both0
